Barbecue Ribs - Crock Pot

1. Spray crock pot with cooking spray
- 3 lbs. bone-in beef short ribs or pork spare ribs
- 1 cup water
- 1/2 cup barbecue sauce
- 1/2 cup dry red wine or beef broth
- 1 T Worchestershire sauce
Applebees Oriental Chicken Salad

1. Blend together all ingredients for dressing in a small bowl with an electric mixer
- Oriental Dressing
- 3/4 cup honey
- 1/4 cup plus 2 tablespoons rice wine vinegar
- 1 cup mayonnaise
- 4 teaspoon Grey Poupon Dijon mustard
- 1/2 teaspoon sesame oil
- Salad
- 2 to 4 cups vegetable oil (for frying)
- 1 egg
- 1/2 cup milk
- 1/2 cup flour
- 1/2 cup corn flake crumbs
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 skinless chicken breast fillet
- 3 cups chopped romaine lettuce
- 1 cup chopped red cabbage
- 1 cup chopped Napa cabbage
- 1/2 carrot, julienned or shredded
- 1 green onion, chopped
- 1 tablespoon sliced almonds
- 1/3 cup crispy chow mein noodles
Chicken Parmesan

1. Preheat oven to 450 degrees F
- 1 clove garlic, minced
- 1 stick unsalted butter (1/2 cup or 1/4 pound), melted
- 1 cup dried bread crumbs
- 1/3 cup grated Parmesan cheese
- 2 Tbsp chopped fresh parsley
- 1/4 teaspoon salt
- 1/4 teaspoon garlic salt
- A large pinch of Italian seasoning (herb mix)
- 1/8 teaspoon ground black pepper
- 2 lbs of skinless, boneless chicken meat cut into pieces no larger than 2x2 inches
Minnesota Wild Rice Soup

In a heavy cooking pot, melt butter
- 2 sticks (1/2 lb.) butter
- 1 white onion, diced small
- 2 stalks celery, diced small
- 3 small carrots, diced small
- 2 Tbsp sherry
- 2 cups flour
- 2 quarts chicken stock
- 12 oz wild rice
- 2 cups heavy whipping cream
- Salt and pepper to taste
Garlic butter for basting or injecting

Combine stock, butter, thyme sprigs, rosemary sprigs and smashed garlic cloves in a small saucepan
- 3/4 cup unsalted chicken stock
- 1/2 cup plus 3 Tbsp. unsalted butter
- 6 thyme sprigs
- 3 rosemary sprigs
- 3 medium garlic cloves, smashed
- 4-3/4 tsp. kosher salt
- 2 tsp. granulated sugar
- Lemon zest
Dilly Beans - Canned

Clean beans. Combine vinegar, salt and water
- 4 lbs green beans
- 1/4 tsp. crushed red pepper
- 1/2 tsp whole mustard seed
- 1/2 tsp. dill weed (per pint jar)
- 1 garlic clove (per pint jar)
- 5 cups vinegar
- 5 cups water
- 1/2 cup salt
Shrimp

- 1/2 stick butter
- 1 lemon
- Fresh shrimp, peeled, etc.
- Italian seasoning
Chicken - Cornflakes & Parmesan

Preheat oven to 350 degrees
- 3/4 cup corn flakes, crushed
- 3/4 cup Parmesan cheese, grated
- 1 envelope (1 oz.) ranch salad dressing mix
- 8 (4 oz.) skinless, boneless chicken breasts halves
- 1/2 cup butter, melted
Manicotti

Brown the ground beef and pork, cool somewhat and add beaten egg
- 1 package Manicotti
- 1/2 lb. ground beef
- 1/2 lb. ground pork
- 1 egg
- 2 Tbls. Italian seasoning
- 3 gloves garlic, minced
- 1 onion, minced
- 1/2 cup Parmesan
- 2 to 3 cups Mozzarella
- 1/4 cup Romano cheese
- 1 cup Ricotta cheese
- 2 Tbls. Parsley, finely chopped
- Tomato Sauce...Sweet Basil is a good one
Chicken Pot Pies

French Onion Chicken Pot Pies
- 1/4 cup butter or margarine - I use coconut oil
- 2-1/2 lb boneless skinless chicken thighs, cut into 1/2 inch
- pieces
- 2 large onions, halved, then thinly sliced (about 1-1/2
- cups)
- 6 cups sliced fresh mushrooms (2 8 oz packages)
- 1/4 cup all- purpose flour
- 4 cups water
- 1/4 cup dry sherry or water
- 1 box (2 oz) onion soup mix (2 envelopes)
- 1/4 teaspoon freshly ground pepper
- 1 can (16.3 oz) Pillsbury Grands Flaky Layers refrigerated
- original biscuits (8 biscuits)
- 6 oz Gruyere cheese, shredded (1-1/2 cups) I use goat
- cheese
