Three-Cheese Mini Macs

1.Preheat the oven to 425°
- 1/2 pound elbow macaroni
- 1 1/2 tablespoons unsalted butter, plus more for brushing
- 1/4 cup freshly grated Parmigiano-Reggiano cheese
- 2 tablespoons all-purpose flour
- 3/4 cup milk
- 4 ounces cheddar cheese, shredded (1 packed cup)
- 4 ounces deli-sliced American cheese, chopped
- 1 large egg yolk
- 1/4 teaspoon smoked Spanish paprika
Creamy Prosciutto & Porcini Penne

Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente
- salt and pepper
- 1 pound white or whole wheat penne rigate
- 1 1/2 cups chicken stock
- 1 ounce dried porcini mushrooms
- 3 tablespoons EVOO
- 1/4 - 1/2 pound prosciutto di parma (ask at the deli counter for prosciutto ends, which are sold at a discount), cut into 1/4-inch dice
- 1/2 pound cremini mushrooms, sliced
- 1 large shallot, chopped
- 4 cloves garlic, finely chopped or grated
- 1 cup heavy cream
- 1/2 about 1/2 cup marsala or dry white wine
- grated parmigiano-reggiano, for tossing
- finely chopped flat-leaf parsley, for garnishing

Strawberry Compote Combine all ingredients
- Strawberry Compote
- 4 cups strawberries, about 1 1/4 pounds
- 2 Tbsp castor sugar
- 2 Tbsp finely chopped crystallized ginger
- 1/4 cup dried figs, finely chopped
- juice and zest of 1 lemon, about 2 Tbsp juice
- 1/2 cup roasted macadamia nuts, chopped
- sprinkling of Falksalt citron

- 1 lb strawberries
- 1/2 to 3/4 cup simple syrup (equal parts sugar and water, heated until dissolved and clear)
- 1/2 cup Midnight Moon moonshine

- 1 1/2 pounds ground beef, pork and veal mix
- Salt and pepper
- 2 tablespoons extra-virgin olive oil
