Smoked Turkey, Blue Cheese and Red Onion Sandwiches

Heat oil in large nonstick skillet over medium-high heat
- 1 1/2 tbs olive oil
- 2 (8-10 oz) red onions, cut into 1/3·inch thick rounds
- 3 1/2 tbs red wine vinegar
- 6 cups trimmed large arugula leaves (about 4 ounces), divided
- 3/4 cup mayonnaise
- 8 1/2 inch thick slices seeded wheat bread (such as La Brea Bakery) or four ciabatta rolls, cut horizontally in half
- 12 oz thinly sliced smoked turkey
- 3/4 cup coarsely crumbled blue cheese ( about 3 ounces)
Hot Malted Chocolate

In a large saucepan, heat milk over medium heat until bubbles form around sides of pan
- 4 cups 2% milk
- 1 cup heavy whipping cream
- 1/2 cup sugar
- 1 cup milk chocolate chips
- 1/3 cup malted milk powder
- 2 tsp vanilla extract
Spring Pea Pasta with Ricotta and Herbs

Bring 4 quarts water to a boil in a stockpot over high
- 4 qt water
- 1/4 cup kosher salt
- 8 oz gemelli, penne or other short pasta
- 2 (8 oz) pkg sugar snap peas, trimmed and strings removed
- 1 (13 oz) pkg frozen sweet peas, thawed
- 1 cup ricotta cheese
- 1/2 cup firmly packed fresh flat leave parsley leaves
- 2 tbs ( 1 oz) salted butter
- 2 tbs thinly sliced fresh chives
- 2 tbs chopped fresh tarragon

- 3 tbs flour
- 3/4 cup cold water

- 2 medium tomatoes, thinly sliced (about 3/4 lb.)
- 1/2 pt. assorted small tomatoes, halved

- 1 (17.3-oz.) package frozen puff pastry sheets, thawed
- 1 (8-oz.) package shredded mozzarella cheese
- 1 (4-oz.) package crumbled feta cheese
- 1/4 cup finely chopped chives garlic clove, minced
- 1/4 cup finely chopped assorted fresh herbs
- 1 tbs olive oil

- 9 cups fresh blackberries (about eight 1/2-pint baskets) or frozen (about 40 ounces), thawed
- 1 cup plus 7 tbs white grape juice

- 5 tsp unflavored gelatin
