Danish Pastry Apple Bars

1. In a large bowl, mix flour and salt
- 2 1/2 cups all-purpose flour
- 1 tsp salt
- 1 cup shortening
- 1 egg yolk
- Milk
- 1 cup cornflakes
- 8 to 10 tart cooking apples, peeled, cored and sliced (8 cups)
- 3/4 to 1 cup granulated sugar
- 1 tsp ground cinnamon
- 1 egg white, lightly beaten
- 1 cup powdered sugar

When making this - I would trim the top and sides so they are even - makes pouring the icing easier
- 1 (18.25-ounce) package Swiss chocolate cake mix without pudding
- 3 large eggs
- 1/2 cup vegetable oil
- 1 1/3 cups water
- 1 (10-ounce) jar seedless raspberry or apricot jam
- 1/2 cup whipping cream

Spiced Streusel Apple Pie

Streusel: Combine nuts, brown sugar, cornmeal, flour, cinnamon and nutmeg in processor
- 2/3 cup walnuts
- 1/2 cup (packed) golden brown sugar
- 1/4 cup yellow cornmeal
- 1/4 cup all purpose flour
- 3/4 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 5 tbs chilled unsalted butter, cut into small pieces
- Filling
- 2 1/4 pounds Granny Smith apples (about 6 medium), peeled, quartered, cored, cut into 1/2-inch-thick wedges
- 1/2 cup sour cream
- 1/4 cup sugar
- 2 tbs all purpose flour
- 1 1/2 tsp ground cinnamon
- 3/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 Pie Crust
- Vanilla ice cream
Chicken Marinade

- 1/2 cup olive oil
- 1/2 cup balsamic vinegar
- 1 clove garlic, crushed
- 3 tablespoons fresh or dried rosemary leaves.

- 3/4 cup peanut butter
- 1/2 cup butter, softened
- 3/4 cup packed brown sugar
- 1/2 cup sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda

- 1 tsp vanilla
- 1 1/4 cups flour
- 2 1/2 cups rolled oats
- 1 1/2 cups raisins or semisweet chocolate pieces

1. In a large resealable plastic bag, combine the first eight ingredients; if desired, add liquid smoke
- FILLING:
- 1/4 cup lime juice
- 1 tablespoon reduced-sodium soy sauce
- 2 teaspoons canola oil
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/2 teaspoon chili powder
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon pepper
- 1/2 teaspoon liquid smoke, optional
- 2 boneless skinless chicken breast halves (4 ounces each)
- 2 teaspoons canola oil
- 1 medium onion, julienned
- 1/2 small sweet red or green pepper, julienned
- 1 teaspoon reduced-sodium soy sauce
- 1/2 teaspoon lime juice
- 4 fat-free tortillas (6 inches), warmed
- Salsa and sour cream, optional
Corned Beef and Cabbage (Heinens)

Place corned beef in a large pot or Dutch oven (I used my 12 qt stockpot) and cover with water
- 3 lb corned beef brisket
- 1 tbs pickling spice (or spice packet that comes with the brisket)
- 10 small red potatoes
- 5 carrots, peeled and cut into 3 inch pieces
- 1 small head cabbage, cut into small wedges
- mustard or horseradish for serving
GREEK QUINOA SALAD

In large bowl, toss together all ingredients until well combined
- 1-1/2 cups cooked quinoa
- 1 medium golden beet, roasted
- 1 medium tomato, quartered and thinly sliced
- 1/4 cucumber, halved and thinly sliced
- 1/4 medium red onion, thinly sliced
- 1/2 cup canned chickpeas, rinsed and drained
- 1/4 cup crumbled feta cheese
- 2 tablespoons Kalamata olives, pitted and halved
- 2 tablespoons sliced pepperoncini
