Italian Style Rice and Beans

Place all ingredients in medium saucepan
- 1 can (14.5 oz) diced tomatoes with Italian herbs
- 1 can (15.8 oz) Great Northern Beans or Cannellini, drained and rinsed.
- 2/3 cup instant rice
- 1/4 tsp Italian seasoning or 1/2 tsp dry basil
Beef Tenderloin Steaks with Balsamic Sauce

Rub tenderloin steaks evenly with salt and pepper
- ~ (6-ounce) beef tenderloin steaks
- 2 tablespoons coarse-grain sea salt* 1 tablespoon coarsely ground pepper 2 tablespoons olive oil
- Balsamic Sauce
- Garnish: fresh thyme sprigs
- 1/4 cup dry red wine
- 1/4 cup dry sherry
- 3 tbs balsamic vinegar
- 1 shallot, chopped
- 2 garlic cloves, chopped
- 2 egg yolks
- 1/3 cup unsalted butter, melted
Baked Ziti

- 12 ounces uncooked ziti or small tube pasta
- 2 lbs ground beef
- 1 jar (28 ounces) spaghetti sauce
- 2 eggs
- 1 carton (15 ounces) ricotta cheese
- 2-1/2 cups (10 ounces) shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese

- 1 Tbs olive oil
- 3/4 cup chopped red onion
- 2 tsp finely chopped garlic

- 1 (16-oz) can cannellini beans (white kidney beans), drained
- 1 (14 1/2 oz) can diced tomatoes with red peppers, undrained
Baked Ziti with Italian Sausage

Preheat oven to 400°. Coat a 4 qt casserole dish with spray
- 1 lb bulk Italian sausage
- 1/4 cup olive oil
- 1 1/2 cup diced onions
- 1/4 cup chopped fresh garlic
- 2 tsp dried Italian seasoning
- 1 tsp red pepper flakes
- 2 (28 oz) cans whole tomatoes
- 8 oz mascarpone cheese
- 1 lb ziti
- 1 lb provolone cheese cut into 1/2 inch cubes
- 1 cup graded parmesan cheese
