Thaw or microwave peas. Drain water chestnuts
- 1 large bag frozen peas
- 1 can sliced water chestnuts
- 1 can cream of mushroom soup
- 1 can Durkee Fried onions
- 1/3 cup milk
British Style Currant Scones

Heat oven to 500°. Line baking sheet with parchment paper
- 3 cups flour
- 1/3 cup sugar
- 2 tbs baking powder
- 1/2 tsp salt
- 8 tbs unsalted buter, cut into 1/2 inch pieces and softened
- 3/4 cup dried currants
- 1 cup whole milk
- 2 large eggs
Hearty Cannellini & Sausage Soup

Brown sausage. Drain. Add broth, beans, cabbage, green onions, salt and pepper
- 12 oz smoked sausage, cubed
- 4 1/2 cups vegetable broth
- 2 (15 oz) cans cannellini beans, rinsed and drained
- 4 cups napa cabbage, chopped
- 3 green onions, chopped
- 1/4 tsp salt
- 1/4 tsp pepper
Green Thumb Sandwich

Instructions In a small bowl, whisk together all dressing ingredients
- 3 tablespoons greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon rice vinegar
- 1 tablespoon chopped basil
- 1/4 teaspoon garlic powder
- salt and fresh ground pepper to taste
- 4 large slices 7-grain (or another whole grain) bread
- 4 ounces herbed goat cheese
- 1/2 cucumber
- 1 medium green pepper
- 1/2 cup alfalfa sprouts
- 1 medium avocado
Raspberry Vinaigrette

Mix all together and chill
- 1/2 1/2 1/2 cup good quality extra virgin olive oil.
- 1/4 1/4 1/4 cup A'Olivier Raspberry Vinegar. Trust me! See link above.
- 1 1 1 Tablespoon honey.
- Juice of half a lemon.
- 1 1 1 Tablespoon chives, chopped.
- pinch pinch sea salt.
- freshly ground pepper.
Chuck Roast in Foil

1. Adjust oven rack to lower-middle position and heat oven to 300°
- Rub:
- 3 tbs cornstarch
- 4 tsp onion powder
- 2 tsp light brown sugar
- 2 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp instant espresso powder
- 1 tsp dried thyme
- 1/2 tsp celery seed
- Chuck Roast
- 1 (4-pound) boneless beef chuck-eye roast
- 2 onions, peeled and quartered
- 6 small red potatoes, scrubbed and quartered
- 4 carrots, peeled and cut into 1/2-inch pieces
- 2 bay leaves
- 2 tbs soy sauce
Penne With Vodka

1. Prepare pasta according to package directions
- 1 lb. uncooked penne or ziti pasta
- 2 tbs butter or margarine
- 2 tbs olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1/2 tsp. dried crushed red pepper
- 1 cup vodka
- 1 (14 1/2-oz.) can crushed tomatoes
- 1 tbs chopped fresh parsley
- 1 tbs chopped fresh basil
- 1 cup whipping cream
- 1/2 tsp. salt
- 1/4 cup freshly grated Parmesan cheese
- Cracked black pepper to taste

In bread machine, pour in water and salt
- 3 1/2 - 4 cups bread flour
- 1 3/4 cups warm water
- 1 tsp salt
- 1 pkg dry yeast
Spinach & Tomatoes

- 2 tbs olive oil
- 1/4 tsp minced garlic
- 1/2 cup halved grape tomatoes
- 1 bag fresh spinach
- salt
Chocolate Cookie Cheesecake

In a small bowl, combine cookie crumbs and butter
- 1-1/2 cups cream-filled chocolate sandwich cookie crumbs (about 16 cookies)
- 3 tbs butter, melted
- 4 pkg (8 oz. each) cream cheese, softened
- 1 cup sugar
- 1 1/2 cups semisweet chocolate chips, melted and cooled
- 3 tsp vanilla extract
- 4 eggs, lightly beaten
- 20 chocolate cream-filled chocolate sandwich cookies, coarsely chopped
