Preheat oven to 350°. Saute celery, onion and leek until soft
- 1 roasting chicken
- 1 leek, cleaned and thinly sliced
- 1 onion, chopped
- 6 celery stalks, chopped
- 4 tsp garlic, minced
- 4 tbs Lemon Olive Oil
- 1 tsp lemongrass, finely chopped
- 1 lemon, zested and juiced
- 1 cup white wine
- salt and pepper to taste

- 2 tbs (1/4 stick) unsalted butter
- 1/2 cup packed light brown sugar
- 1 lb fresh cherries, stemmed and pitted or frozen pitted cherries, thawed, undrained
- Pinch of Kosher salt
- 1 tbs bourbon or brandy
- Fresh lemon juice
