Greek Style Pizza

1. In a large skillet, melt butter
- 1/4 cup butter, cubed (I doubled this)
- 1/4 cup olive oil (I doubled this)
- 1/2 lb sliced fresh mushrooms
- 1 medium onion, sliced
- 3 garlic cloves, minced
- 1 pkg fresh spinach, trimmed and coarsely chopped
- 1 tbs lemon juice
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 pkg (16 oz) frozen phyllo dough, thawed
- 2 cups (8 oz) shredded part-skim mozzarella cheese
- 1 cup (4 oz) crumbled feta cheese
- 3 medium ripe tomatoes, sliced (I didn't use)
- 1/2 cup seasoned bread crumbs (I didn't use)
True Love Chocolate Cake

In a large bowl, beat butter and sugar until crumbly, about 2 minutes
- Cake:
- 1/4 cup butter, softened
- 1 2/3 cups sugar
- 2 eggs
- 1/2 cup unsweetened applesauce
- 2 1/4 cups flour
- 2/3 cup coca
- 1 1/4 tsp baking powder
- 1 tsp salt
- 1/4 tsp baking soda
- 1 1/4 cups water
- 1 cup semisweet chocolate chips
- Frosting:
- 1 (8 oz pkg) reduced fat cream cheese
- 1/3 cup confectioners' sugar
- 1 tsp vanilla
- 1 (8 oz carton) frozen reduced fat whipped topping, thawed
- Topping:
- 3/4 cup flaked coconut
- 1/2 cup candy hearts
Warm Bacon Spinach Salad

In a skillet, cook the bacon until crisp
- 3 bacon strips, diced
- 1 tablespoon all-purpose flour
- 1 egg
- 6 tablespoons water
- 2 tablespoons vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
- 3 cups torn fresh spinach
- 1/2 cup seasoned croutons
Slow Cooker Pot Roast

In large skillet, heat all and brown roast
- 1 tbs oil
- 3- 3 1/2 lb boneless beef pot roast
- 4 carrots, sliced
- 4 medium potatoes, cut into 1 inch pieces
- 2 envelopes Onion Soup Mix
- 3/4 cup water
Chunky Chicken-Barley Soup

1. Saute first 4 ingredients in hot oil in a large Dutch oven over medium-high heat 5 minutes
- 7 cup chopped onion
- 7 cup chopped carrot
- 1/2 cup chopped celery
- 2 garlic cloves, minced
- 2 tsp. olive oil
- 2 (14 1/2 oz.) cans chicken broth
- 1 3/4 cups water
- 1/4 tsp salt
- 1/4 tsp dried thyme
- 1/4 tsp Pepper
- 7 cup chopped cooked chicken
- 1/2 cup uncooked quick-cooklng barley
Chorizo & Chihuahua Appetizer (TK)

Saute vegetables. Brown sausage
- 1 lb Chorizo sausage
- 3/4 cup chopped onions
- 3/4 cup chopped red pepper
- 3/4 cup chopped yellow pepper
- 1/2 poblano pepper, chopped
- 1/2 lb Chihuahua cheese, shredded
Cherry-Almond Streusel Tart

1. Press pastry onto the bottom and up the sides of an ungreased 9-in
- TOPPING:
- PASTRY
- 2/3 cup sugar
- 3 tbs cornstarch
- Dash salt
- 4 cups fresh tart cherries, pitted or frozen pitted tart cherries, thawed
- 1/8 tsp almond extract
- 1/4 cup quick-cooking oats
- 3 tbs all-purpose flour
- 2 tbs brown sugar
- 1 tbs slivered almonds
- 2 tbs cold butter
The Bicicletta

Fill wineglass with ice Add Campari, wine and soda; stir to mix
- Ice cubes
- 2 oz Campari
- 1 1/2 oz dry white wine
- 1/2 oz club soda
- Lemon slice (optional)
Asparagus with Mustard Sauce

Place asparagus in a shallow baking dish; dot with butter
- 2 lbs fresh asparagus, trimmed
- 3 tbs butter, cubed
- salt and pepper to taste
- 1 cup (8 oz) sour cream
- 1/4 cup Dijon mustard
- 2 tbs red wine vinegar
- 2 tsp sugar
- 1/8 tsp crushed red pepper flakes
Oatmeal Bread

Place all of the ingredients (except fruit) into the pan of your machine, program machine for dough
- 3 cups bread flour
- 1 cup rolled oats
- 2 tbs butter
- 1 1/2 tsp salt
- 3 tbs brown sugar or honey
- 2 tsp instant yeast or 1 pkg active dry yeast
- 1 1/4 cup luke warm milk
- 3/4 cup raisins or currants (optional)
