- 1/4 cup butter

- 1/2 cup water
- 1-1/2 teaspoons sugar

- Cream Mixture:
- 3/4 cup ricotta cheese
- 8 ounces Mascarpone cheese
- 3 tablespoons sugar
- 1 teaspoon vanilla
Crostata with Apples, Walnuts and Gorgonzola

Crust: 1. In a food processor combine the flour, salt, and sugar
- Crust:
- 1-1/2 cups all-purpose flour
- 1/2 teaspoon kosher salt
- 1 tablespoon granulated sugar
- 3 tablespoons unsalted butter, cut into small pieces
- 1/2 cup Mascarpone cheese
- 1-1/2 tablespoons lemon juice
- 3 tablespoons ice water
- Filling:
- 3 tablespoons unsalted butter, melted
- 4 small Granny Smith apples cut into 1/2-inch thick slices
- 1/4 cup granulated sugar
- 3/4 teaspoon ground cinnamon
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 cup chopped walnuts
- 1/3 cup crumbled Gorgonzola
- 1 large egg, lightly beaten
Veal Marsala

- Veal cutlets
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 shallot, chopped
- 6 garlic cloves
- 4 white button mushrooms
- 4 wild mushrooms
- 1/2 cup Marsala wine
- 1 cup chicken stock
- 1 rosemary stem
Your Own Blended Pork Sausage and Fried Eggs

1. Put the meat in a large bowl and mix together with your hands
- 1 pound ground pork (lean but not too lean)
- Kosher salt
- 1 teaspoon chile flakes
- 1 teaspoon fennel seeds, toasted
- 1/2 teaspoon cayenne pepper
- 1/2 cup breadcrumbs, toasted
- 1/2 cup finely grated Parmesan

Nougat Montilimar

1. Toast the almonds and pistachios at 325 degrees F for 20 minutes on a baking sheet
- 2-2/3 cups almonds, toasted
- 1 cup pistachios, toasted
- 2-1/2 cups sugar
- 3/4 cup plus 2 tablespoons corn syrup
- 9 tablespoons water
- 1-3/4 cups honey
- 1/3 cup egg whites (or 1 1/2 whites)
- Cornstarch, for dusting
- 8 to 12 ounces bittersweet chocolate, tempered

- Brownies:
- 6 ounces unsweetened chocolate, coarsely chopped
- 3/4 cup unsalted butter
- 1-1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1-3/4 cups sugar
- 4 eggs
- 2 teaspoons vanilla
- Frosting:
- 2 cups sugar
- 2/3 cup milk
- 1/2 cup unsalted butter
- 4 ounces unsweetened chocolate, coarsely chopped

1. In a blender, combine pineapple, berries, orange juice, lemon juice and sugar
- 1 can (20 ounces) pineapple chunks, drained
- 2 cups fresh or frozen unsweetened strawberries or raspberries
- 1 cup orange juice

- 1 liter ginger ale, chilled

- 4 chicken thighs

- 1 large red bell pepper, chopped

- 1 ( 28-ounce) can diced tomatoes with juice
