  • 1 1/2 lbs lean ground beef, browned and drained
  • 6 beef bouillon cubes (dissolve in hot water)
  • 6 cups water
  • 1 pkg. frozen vegetable gumbo mix
  • 1 48-oz. can crushed tomatoes (or can use diced)
  • 1/2 c. orzo (added last 10 minutes of cooking)

  • OPTIONAL - baby carrots, julienned zucchini, fresh pole beans, can of Italian cut green beans --- can add any vegetables you want, but perfectly fine with the basic ingredients.

I still have leftover cooked turkey in my freezer from Thanksgiving! So after the Christmas turkey, I cooked turkey...

  • White Sauce:
  • 3 Tbsp. unsalted butter
  • 3 Tbsp. flour
  • 1/2 c. milk
  • 1/2 c. chicken broth
  • Salt & freshly ground white pepper to taste
  • Chicken Mixture:
  • 2 1/2 c. finely chopped cooked chicken (I use my food processor to do this)
  • 1 c. finely chopped celery
  • 1/2 c. finely chopped onion
  • 1/2 tsp. ground allspice or more to taste
  • Salt & freshly ground white pepper to taste
  • For making the croquettes:
  • 1/2 c. plain breadcrumbs (I use Progresso Plain Breadcrumbs)
  • 2 Tbsp. canola oil
  • 1 Tbsp. unsalted butter
  • Cream Sauce to serve with Croquettes:
  • 2 Tbsp. unsalted butter
  • 2 Tbsp. flour
  • 1 c. milk
  • 1 c. chicken broth
  • Salt & freshly ground white pepper to taste

Poblano peppers are often called “Pasilla Peppers”

  • FOR THE SAUCE (So delicious, I recommend doubling it):
  • 4 large poblano chiles
  • ...................................
  • 2 medium tomatoes, chopped
  • 1/2 medium white onion, chopped
  • 1 large clove garlic, chopped
  • 1 tsp. dried oregano, crumbled
  • 1 tsp. ground cumin
  • Generous pinch ground cinnamon
  • Kosher salt
  • 1 Tbs. olive oil
  • 2 cups shredded cooked chicken, preferably dark meat*
  • 1-1/2 cups cooked brown** or white rice
  • 2 cups grated sharp or extra-sharp white Cheddar (about 7 oz.)
  • 1/4 cup chopped fresh cilantro (including some tender stems)
  • 1 Tbs. lime juice
  • OPTIONAL SHREDDED CHICKEN RECIPE
  • 4-5 chicken thighs (boneless or bone-in, doesn't matter)
  • 2 tsp whole peppercorns
  • 2 Bay leaves
  • 2 whole cloves garlic, unpeeled
  • 2 tsp Mexican Seasoning Blend (or taco seasoning)
  • Water (enough to cover the chicken. NOTE: I add one packet of Trader Joe's reduced sodium chicken broth concentrate)
