Potato chunks, Swiss cheese and onions fill this creamy soup that's a comfort on crisp autumn afternoons
- 1/2 pound small unpeeled red potatoes, cut into chunks
- 1/2 pound medium russet potatoes, peeled and cut into chunks
- 1 can (14-1/2 ounces) reduced-sodium chicken broth
- 1 cup water
- 1/4 cup chopped onion
- 2 teaspoons canola oil
- 1 tablespoon all-purpose flour
- 1/4 cup milk
- 2 tablespoons evaporated milk
- 3 tablespoons cream cheese, cubed
- 1 tablespoon minced fresh parsley
- 1/4 teaspoon salt
- 1/8 teaspoon white pepper
- 1/3 cup shredded Swiss cheese
Gravy-Baked Pork Chops

For easy preparation, choose a skillet with an oven proof handle (like a cast iron pan)
- 4 lean pork chops (1/2-3/4 inch thickness)
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- pinch of garlic powder
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 Tablespoon butter, melted
- 1 can Cream of Mushroom soup
- 2/3 cup evaporated milk (1 small can)

Grandma's Shrimp Salad

I remember my mother making this when I was a child
- 2 1/3 cups uncooked small pasta shells
- 1/3 pound cooked salad shrimp
- 3 celery ribs, chopped
- 1 small onion, chopped
- 4 radishes, halved and sliced
- 4 hard-cooked eggs, chopped
- 1 cup mayonnaise
- 1 tablespoon prepared mustard
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper

- 2 cups lard
- 2 cups white sugar
- 1 egg
- 12 cup cream (or canned milk)
- 2 teaspoons salt
- 2 teaspoons baking powder
- 4 cups oatmeal
- 4 cups flour
Crockpot Hamburger Soup

I love this soup. Comfort food at it’s finest
- 1 1/2 lbs lean ground beef, browned and drained
- 6 beef bouillon cubes (dissolve in hot water)
- 6 cups water
- 1 pkg. frozen vegetable gumbo mix
- 1 48-oz. can crushed tomatoes (or can use diced)
- 1/2 c. orzo (added last 10 minutes of cooking)
- ....................................................
- OPTIONAL - baby carrots, julienned zucchini, fresh pole beans, can of Italian cut green beans --- can add any vegetables you want, but perfectly fine with the basic ingredients.
Chicken Croquettes with Cream Sauce

I still have leftover cooked turkey in my freezer from Thanksgiving! So after the Christmas turkey, I cooked turkey...
- White Sauce:
- 3 Tbsp. unsalted butter
- 3 Tbsp. flour
- 1/2 c. milk
- 1/2 c. chicken broth
- Salt & freshly ground white pepper to taste
- Chicken Mixture:
- 2 1/2 c. finely chopped cooked chicken (I use my food processor to do this)
- 1 c. finely chopped celery
- 1/2 c. finely chopped onion
- 1/2 tsp. ground allspice or more to taste
- Salt & freshly ground white pepper to taste
- For making the croquettes:
- 1/2 c. plain breadcrumbs (I use Progresso Plain Breadcrumbs)
- 2 Tbsp. canola oil
- 1 Tbsp. unsalted butter
- Cream Sauce to serve with Croquettes:
- 2 Tbsp. unsalted butter
- 2 Tbsp. flour
- 1 c. milk
- 1 c. chicken broth
- Salt & freshly ground white pepper to taste
Poblanos Stuffed with Cheddar and Chicken

Poblano peppers are often called “Pasilla Peppers”
- FOR THE SAUCE (So delicious, I recommend doubling it):
- 4 large poblano chiles
- ...................................
- 2 medium tomatoes, chopped
- 1/2 medium white onion, chopped
- 1 large clove garlic, chopped
- 1 tsp. dried oregano, crumbled
- 1 tsp. ground cumin
- Generous pinch ground cinnamon
- Kosher salt
- 1 Tbs. olive oil
- 2 cups shredded cooked chicken, preferably dark meat*
- 1-1/2 cups cooked brown** or white rice
- 2 cups grated sharp or extra-sharp white Cheddar (about 7 oz.)
- 1/4 cup chopped fresh cilantro (including some tender stems)
- 1 Tbs. lime juice
- OPTIONAL SHREDDED CHICKEN RECIPE
- 4-5 chicken thighs (boneless or bone-in, doesn't matter)
- 2 tsp whole peppercorns
- 2 Bay leaves
- 2 whole cloves garlic, unpeeled
- 2 tsp Mexican Seasoning Blend (or taco seasoning)
- Water (enough to cover the chicken. NOTE: I add one packet of Trader Joe's reduced sodium chicken broth concentrate)

- Old Bay Seasoning
- 2-3 Tbs. of oil for frying
- 1/2 cup sour cream
- 1 Tbs. lime juice
- Several teaspoons of adobe sauce from chipotle peppers
- Palmful of chopped fresh cilantro
- Chopped romaine lettuce, cabbage or slaw mix
- Corn or flour tortillas
