Biscotti
By Addie
These are great, super easy, and delicious
- 1/4 cup vegetable oil
- 1/2 - 1/4 cup white sugar (The person I originally got this recipe from used 1/4 cup, but her recipe said to use 1/2 cup, I tend to split the difference at 3/8 of a cup)
- 1 1/2 cups and 2 tablespoons all-purpose flour (This depends HIGHLY on the humidity. You'll need enough to make a workable dough. It shouldn't be overly sticky, you should be able to form it fairly easily.)
- 2 eggs
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons vanilla extract or
- 2 tsp almond/anise extract, if you'd prefer)

- TOPPING:
- 2 3/4 cups all-purpose flour
- 1/3 cup sugar
- 3/4 teaspoon salt
- 1 tablespoon baking powder
- 1/2 cup cold butter
- 1 1/2 cups chopped dried fruit, chocolate or other flavored chips and/or nuts
- 2 large eggs
- 2 teaspoons vanilla extract or the flavoring of your choice
- 1/2 cup - 2/3 cup milk
- Note: Start with less milk, and add more ONLY if required, to make the dough of the correct consistency. you might need more milk in dry winter months, as flour soaks up all the moisture quite easily, hence you may need a bit more liquid.
- 2 teaspoons milk
- 2 tablespoons white sugar or cinnamon sugar, optional
