Soft Tacos

Turn oven to 200 degrees. You are going to cook the beef on the stove but you'll warm the tacos in the oven
- 2 lbs ground beef ( I used the very low fat kind so I didn't have any fat to drain out)
- 1 teaspoon salt (I used a little less, you won't miss it)
- 2 Tablespoons Chili powder (use all of this)
- 2 Tablespoons Paprika (use all of this)
- 1 teaspoon Cumin (I used two because cumin is one of the secrets to making the taco flavor so good)
- 1 teaspoon Garlic powder
- 1 teaspoon onion powder
- 1/8 teaspoon cayenne pepper
- Large squares of aluminum foil
- Shredded Sharp Cheddar Cheese
- Chopped tomatoes
- Chopped onions
- Shredded lettuce
- Taco sauce of your choice (Hot for me)
Black Bean Soup III

Black bean soup seasoned with spicy salsa, cumin and lime is perfect on chilly winter evenings
- 1 Tablespoon olive oil
- 4 large cloves garlic, roughly chopped
- 3/4 cup diced carrots (about 2 med carrots)
- 3/4 cup diced celery (about 2 ribs)
- 1 cup diced onion (about 1 sm-med onion)
- 2 cans black beans, rinsed and drained
- 1 3.5-oz can green chilies
- 2 cans low-sodium beef broth
- 1 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/2 teaspoon dry oregano leaves
- 1 bay leaf
- Optional Toppings: sour cream, tortilla chips, grated cheese, chopped cilantro, etc.
Church's Fried Chicken

Everyone loves fried chicken, and this is a great recipe!
- 1 Tablespoon sugar
- 1 1/2 cup self-rising flour
- 1/2 cup cornstarch
- 1 Tablespoon seasoned salt
- 2 teaspoon paprika
- 1/2 teaspoon baking soda
- 1/2 cup biscuit mix
- 1 envelope italian dressing mix
- 1 envelope onion soup mix
- 2-3 lbs chicken, cut into 8 pieces, or 6 chicken breasts, or 10 chicken legs
- 2 eggs, beaten with 1/4 cup cold water
- 1 cup corn oil for frying
Tuna Noodle Casserole II

Put oven rack in middle position and preheat oven to 375°F
- 1 medium onion, finely chopped
- 4 1/2 tablespoons unsalted butter
- 2 teaspoons soy sauce
- 1/4 cup Sherry
- 1/4 cup all-purpose flour
- 10 oz mushrooms, trimmed and sliced 1/4 inch thick (4 cups)
- 2 cups low-sodium chicken broth
- 1 cup whole milk
- 2 teaspoons fresh lemon juice
- 1/4 teaspoon salt
- 1 (6-oz) can tuna in olive oil, drained
- 6 oz dried curly egg noodles (preferably Pennsylvania Dutch style; about 3 1/4 cups)
- 1 1/2 cups coarse fresh bread crumbs (from 3 slices firm white sandwich bread)
- 4 oz coarsely grated Cheddar (1 cup)
- 1 tablespoon vegetable oil

- 3 cups flour
- 1/4 teaspoon salt
- 1 cup sugar
- 4 teaspoons baking powder
- 1 1/2 cups milk
- 2 eggs
- 2 teaspoons vanilla
- 1/2 cup (1 stick) real butter, melted

- Topping:
- 1 cup (2 sticks) real butter, softened
- 1 cup brown sugar
- 2 tablespoons flour
- 1 tablespoon cinnamon
- 3/4 cup chopped pecans, (optional) (always measure the nuts first then chop them)

- Glaze:
- 2 cups powdered sugar
- 5 tablespoons milk
- 1 teaspoon vanilla
Roasted Cauliflower

Preheat oven to 450°F. Toss cauliflower, oil, marjoram, salt and pepper in a large bowl
- 8 cups 1-inch-thick slices cauliflower florets, (about 1 large head; see Tip)
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon dried marjoram
- 1/4 teaspoon salt
- Freshly ground pepper to taste

Boston Baked Beans II

"The beans can be made ahead
- 4 ounces salt pork, trimmed of rind and cut into 1/2 pieces 2 ounces bacon, cut into 1/4 pieces ( about 2 slices)
- 1 medium onions, chopped fine
- 1/2 cup mild molasses, plus
- 1 tablespoon mild molasses
- 1 1/2 tablespoons brown mustard
- 1 lb small dried white beans, rinsed and picked over ( but NOT SOAKED or boiled at all... just dry beans)
- 9 cups water
- Salt
- 1 teaspoon cider vinegar
- Ground black pepper
