Cherry Pie

1. Drain cherries reserve 1 C liquid
- 2 16 oz cans pitted tart red cherries (water packed)
- 1 1/2 C sugar
- 1/3 C cornstarch
- 1 T butter
- 3 or 4 drops almond extract
- Pastry for a lattice top pie
Chicken Florentine Artichoke

Preheat oven to 350 degrees F
- 8 ounces dried bow tie pasta
- 1 small onion, chopped
- 1 tablespoon butter
- 2 eggs
- 1 1/4 cups milk
- 1 teaspoon dried Italian seasoning
- 1/4 teaspoon crushed red pepper (optional)
- 2 cups chopped cooked chicken
- 2 cups shredded Monterey Jack cheese (8 oz.)
- 1 14 ounce can artichoke hearts, drained and quartered
- 1 10 ounce frozen chopped spinach, thawed and well drained
- 1/2 cup oil-packed dried tomatoes, drained and chopped
- 1/4 cup grated Parmesan cheese
- 1/2 cup soft bread crumbs
- 1/2 teaspoon paprika
- 1 tablespoon butter, melted

Orange Glazed Carrot Sticks

1.Cut pared carrots into sticks
- 2 lbs. Carrots
- 2 T Butter
- 1/3 C Lt. Brown Sugar
- 1/2 C Orange Juice
- 1/2 t Salt
WILD RICE AND FRUIT SALAD

1. Place the wild rice in a medium pot with 4 cups of water and 2 t of salt and bring to a boil
- 1 cup wild rice (6oz)
- kosher salt
- 3 navel oranges
- 2 T olive oil
- 2 T orange juice
- 2 T raspberry vinegar
- 3/4 C seedless green grapes, cut in half
- 1/2 C toasted pecans
- 1/4 C dried cranberries
- 2 T scallions, white and green parts, chopped
- 1/2 t salt and fresh ground black pepper
Tilapia in mango BBQ sauce

In a medium bowl, combine tomato sauce, mango nectar, ketchup, brown sugar, vinegar, molasses, and garlic powder
- 1/4 cup canned tomato sauce
- 2 tablespoons (1 ounce) mango nectar
- 2 tablespoons ketchup
- 2 teaspoons brown sugar (loosely packed)
- 2 teaspoons cider vinegar
- 1 teaspoon molasses
- 1/2 teaspoon garlic powder
- 1/4 cup diced tomatoes
- 1/4 cup diced mango
Mostacciolli

Combine first eight ingredients, simmer one hour
- 1 large onion chopped
- 1 green pepper chopped
- 1 clove garlic minced
- 1 1/2 lbs gr pork
- 16 oz stewed tomatoes
- 1 can tomato soup
- 1 small tomato paste
- 1 small tomato sauce
- 1 lb mostacciolli
- Grated cheddar cheese
Red Beans and Rice

1.To soften beans, soak beans in 4 C water overnight
- 8 oz Dried, small red beans, rinsed
- 8 C Water
- 1 Smoked ham hock (about 8 oz.)
- 1 C Onion, chopped
- 1 1/2 t Garlic, minced
- 1 tS alt
- 1 t Ground Cumin
- 1 C Green pepper, chopped
- 1 C Ripe tomato, chopped
Pork Chops with Peppers and Capers

- 6 pork chops, pounded thin by your butcher
- Salt and pepper, to taste
- 1 cup flour
- 3 tablespoons extra-virgin olive oil
- 1 cup dry white wine
- 1 red, 1 yellow and 1 green sweet bell pepper, cored and cut into thin strips
- 5 bulb onions, cut into concentric rings, with the green tops sliced and reserved
- 1/4 cup black olives, pitted and chopped
- 1 tablespoon capers with their brine

- 1 Egg, hardcooked, diced
- 1/3 C Onion, minced
- 3 pcs. Bacon, fried and crumbled, reserve drippings
- 3 T Sugar
- 1/4 C Vinegar
- 1 Head of Lettuce
