Easy Bistro Chicken

Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat
- 2 tablespoons olive oil, divided
- 4 (6-ounce) chicken breast halves, skinned
- 4 chicken thighs (about 1 pound), skinned
- 4 chicken drumsticks (about1 pound), skinned
- 2 cups chopped onion
- 4 garlic cloves, minced
- 1 cup chopped celery
- 1/2 cup chopped fresh basil
- 1/2 cup chopped fresh flat-leaf parsley
- 1/2 cup red wine vinegar
- 1/4 cup sliced green olives
- 1/4 cup capers
- 1 tablespoon sugar
- Dash of ground red pepper
- 2 bay leaves
- 1 (28-ounce) can Italian-style tomatoes, undrained and chopped
- 8 cups hot cooked macaroni or cavatappi

- 1 cup firmly packed brown sugar
- 1/2 cup butter, softened

- 2 cups hot cooked fettuccine
Soy Sauce Marinated Chicken Breasts

Combine soy sauce, sugar, sesame oil, garlic, and ginger with chicken breasts and marinate for 10-15 minutes
- 2 boneless, skinless chicken breasts or turkey breast cutlets, about 3/4-inch thick
- 2 tbsp soy sauce
- 1 tbsp sugar
- 1 tsp. toasted sesame oil
- 1 small garlic clove, minced
- 1/2 tsp grated ginger
- 1 green onion, white part w/1 inch green, cut into slivers

Beat until thickened and spread over cheese mixture
- Part one: 1 1/2 cups flour
- 3/4 cups melted butter
- 3/4 cups finely chopped walnuts
- Mix all and spread in 9x13 pan. Bake at 350 for 15-20 minutes. Let cool.
- Part two: 8 ounces cream cheese, softened
- 1 cup confectioner's sugar
- 1/2 large container Cool Whip
- Blend and spread on cooled crust.
- Part three: 1 package instant vanilla pudding
- 1 package instant chocolate pudding
- 3 cups milk

STEP 1 - As usual, first we’ll prepare
- For the stuffing
- 1 tasty sausage (roughly 130g/4.5oz) or flavoured/herby sausage meat
- 1 small onion
- Optional: Pinch of pepper/ground sage/paprika (whichever you prefer)
- For the pasta
- 2 eggs
- Plain/all-purpose flour (roughly 250g/8.8oz)
- Salt
- For the sauce
- 400 g/14oz tin of chopped tomatoes (or just chop plum toms)
- Extra virgin olive oil
- 10 fresh basil leaves
- Optional: parmesan cheese (to grate)
Easy Mexican Rice (Spanish Rice)

In a medium sauce pan, heat oil over medium heat
- 1 1/2 cups rice
- 2 1/2 cups chicken broth
- 1 cup plain tomato sauce*
- 3 cloves finely chopped garlic *
- 1/4 of a medium onion*
- 2 tablespoons oil
- 4 heaping tablespoons of finely chopped parsley (optional)

Shake ingredients in an airtight container to mix well, Store in a cool, dark place up to a year
- 3 tbsp each: minced garlic, paprika & sugar
- 2 tbsp salt
- 1 tbsp ground black pepper
- 2 tsp each: ground dried sage & ground ginger
- 1 tsp each: ground cumin & dry mustard
- 1/2 to 1 tsp cayenne (ground red pepper)
