Chicken Satay

Cut the chicken into strips 4 inches long by 1D2 inch wide
- 1 1⁄2 lb. boneless, skinless chicken thighs
- 1 ⁄2 cup coconut milk
- 1 ⁄4 cup fish sauce
- 3 Tbs. firmly packed light brown sugar
- 2 Tbs. chopped fresh cilantro
- 1 Tbs. Madras curry powder
- 1 Tbs. canola oil
- Peanut sauce for serving

Preheat oven to 450 degrees F
- 1 2/3 to 1 3/4 pounds ground sirloin
- 1 medium onion, cut into chunks
- 2 ribs celery from the heart of the stalk, cut into 2-inch pieces

- 1 cup plain bread crumbs
- 2 tablespoons grill seasoning

- 1/4 c flour
- 1/4 c butter, softened
- 3/4 c chopped nuts
- 3/4 c hershey’s mini chips-semi sweet chocolate
- combine brown sugar, flour & butter in bowl until crumbly, stir in nuts & mini chips
- 1/2 c butter, softened
- 1 c sugar
- 3 eggs
- 1 c sour cream
- 1 tsp vanilla extract
- 2 c flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt

-With a hand mixer or stand mixer, beat the cream cheese, butter, and peanut butter until smooth
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup butter, slightly softened
- 1 cup creamy peanut butter
- 2 cups powdered sugar
- 3 Tablespoons brown sugar
- 1/4 cup all-purpose flour
- 1 teaspoon vanilla
- 2 1/2 cups rolled oats, old fashioned or quick (see Note)
- 2/3 cup plain M&Ms (give or take)
- 1 cup semi-sweet chocolate chips

Preheat large sauté pan on medium-high 2–3 minutes
- 4 fish fillets (tilapia, snapper, or mahi; 1–1 1/2 lb), thawed
- 1/4 teaspoon pepper
- 1 teaspoon Greek seasoning, divided
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon minced garlic
- 1/4 cup pre-diced onions
- 1 (14-oz) can quartered artichoke hearts (drained)
- 1 (14.5-oz) can diced tomatoes (drained)
- 1/4 cup white wine

Combine all ingredients, store in airtight container for up to 3 months
- 1 Tbsp garlic powder
- 2-3 tsp cayenne pepper
- 2 tsp onion powder
- 2 tsp dried thyme
- 2 tsp sugar
- 2 tsp salt
- 1 tsp paprika
- 1 tsp ground allspice
- 1/2 tsp black pepper
- 1/2 tsp crushed red pepper

PARMESAN CRUSTED CHICKEN

Preheat oven to 425°. Combine Hellmann's® or Best Foods® Real Mayonnaise with cheese in medium bowl
- 1/2 cup Hellmann's® or Best Foods® Real Mayonnaise
- 1/4 cup grated Parmesan cheese
- 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
- 4 tsp. Italian seasoned dry bread crumbs

In a medium sauce pot, heat the oil and add the sofrito over medium heat
- For the Meat Filling:
- 2 Tablespoons oil (we used canola)
- 1/4 cup sofrito (available in the freezer section or Spanish section.
- 5 lbs of pork shoulder, cut into small bite sized pieces
- 8 oz tomato sauce
- 4 oz water
- Salt
- Garlic powder
- For the masa:
- 20 green cooking bananas (plantains)
- 5 lbs of yautia or taro root (Yuca)
- 1 Tablespoon Sofrito
- Salt
- 1/4 cup sauce from the filling
- 8 oz evaporated milk (optional)
- Extras:
- A jar of spanish olives, pitted and drained
- 15 oz can of chick peas, rinsed and drained
- 1 cup achiote oil (achiote seeds + water = achiote oil, also found in Spanish aisle)
- Assembly:
- parchment paper

- banana leaves (cut in half)

- 1 pound beef boneless sirloin
- 1 tablespoon vegetable oil
- 1 teaspoon garlic pepper
- 1 bag (1 pound) frozen potatoes, carrots, celery and onions
- 1 jar (12 ounces) beef gravy
