Parmesan Chicken (PAM)

Melt butter, add other ingredients and stir well
- BREAD CRUMB MIXTURE:
- 1 stick butter
- 1 1/2 Tbsp. worcheshire
- 3-4 Tbs. Dijon mustard
- 1 clove garlic, crushed
- 2 Cups bread crumbs
- 1 1/2 cup parmesan cheese, grated

Butterfly chicken breasts; cut in half
- 2 boneless, skinless chicken breasts
- Kosher salt and pepper, to taste
- 1 cup vegetable oil, plus more for brushing
- 4 sandwich rolls, split
- 3/4 cup all-purpose flour
- 2 eggs, beaten
- 1 cup dry bread crumbs
- 3/4 cup finely grated Parmigiano-Reggiano
- 1 1/3 cups shredded mozzarella
- 1/4 cup thinly sliced fresh basil

Pound Cake

All the ingredients should be room temperature

- 1 cup butter
- 2 cups sugar
- 6 eggs (recipe says can use 4) but I always use 6
- 1 cup self rising flour
- 2 cups plain flour
- 1 cup milk
- dash salt
- 1 teaspoon vanilla and
- 1 teaspoon butter flavoring, or can use lemon flavoring and lemon zest instead.

1. Preheat oven to 350 degrees
- 1 (2 lb) package frozen hash brown potatoes, thawed
- 1/2 cup melted butter
- 1 (10 3/4 ounce) can condensed cream of chicken soup
- 1 (8 ounce) container sour cream
- 1/2 cup chopped onion
- 2 cups shredded cheddar cheese
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper

Chili Con Queso

Saute onions in butter in medium saucepan until tender
- 1 medium size onion, (1/2 cup) finely chopped
- 3 Tbsp. butter
- 3 Tbsp flour
- 1 tsp. salt

- 1 can (1 lb.) whole tomatoes, drained and chopped coarsely
- 1 can (4 oz.) chilies, chopped
- 1 pkg. (8 oz.) Monterrey Jack cheese, cubed

Slice tenderloin in half lengthwise; then slice crosswards into 1" cubes
- 1 1/2 lb. pork tenderloin
- 6 fresh peaches, or nectarines, cut into 1" slices
