Mango Salsa

Combine all the ingredients and season well with salt and pepper
- 1 Large Ripe Mango, diced
- 1 Medium Size Red Bell Pepper, diced
- 1 Small Red Onion, diced
- 1 tsp Cumin Powder
- 1 Big Lime, juiced
- 3 Tbsp Chopped Cilantro
- 3 Tbsp Orange Juice
- Sea Salt to taste
- Freshly Ground Black Pepper

- 1 small spaghetti squash, about 2 1/4 pounds
- 2 1/2 tablespoons butter
- 2 1/2 tablespoons finely chopped mixed soft herbs (basil, chives, chervil, parsley, sage)
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Pizza Dough

Put the water in a small bowl
- 1 1/2 cups warm water, 100 to 110 degrees F, plus extra as needed
- 1 (1/4-ounce) packet active dry yeast
- 5 cups all-purpose flour, plus extra as needed
- 1 1/2 teaspoons fine sea salt
- Olive oil, for drizzling
Cinnamon Rolls

Heat oven to 350 degrees F
- Dough:
- 1/4-ounce package yeast
- 1/2 cup warm water
- 1/2 cup scalded milk
- 1/4 cup sugar
- 1/3 cup butter or shortening
- 1 teaspoon salt
- 1 egg
- 3 1/2 to 4 cups all-purpose flour
- Filling:
- 1/2 cup melted butter, plus more for pan
- 3/4 cup sugar, plus more for pan
- 2 tablespoons ground cinnamon
- 3/4 cup raisins, walnuts, or pecans, optional
- Glaze:
- 4 tablespoons butter
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 3 to 6 tablespoons hot water
Yummy Sauce

This is a yummy rice sauce (kind of a teriyaki or yohsida-style sauce)
- 2 cups soy sauce
- 3/4 cup brown sugar, divided
- 3/4 cup white sugar, divided
- 10 green onions, cut into 1 1/2 inch sections
- 5 slices fresh gingerroot
- 5 garlic clove, chopped
- 1 cup honey
Morelos Salsa Verde

Place tomatillos, jalapenos, and garlic in a large pot
- 2 pounds tomatillos, husked
- 2 fresh jalapeno peppers
- 3 cloves garlic, peeled
- 1 dash cloves
- 1/2 teaspoon ground cumin
- 1 dash black pepper
- 1 teaspoon chicken bouillon granules, or salt
White Bean Chicken Chili

Chop Onion and Chicken and saute in Butter and Garlic Salt (large pot, medium heat)
- 2 tbsp Butter
- 3 tsp Garlic Powder
- 1 large Yellow Onion
- 1-2 lb chicken breast, cut into pieces
- 5 cans Great Northern White Beans
- 36 oz Chicken Stock
- 2 cans of chopped Green Chilies
- 2 tsp Cumin
- 2 tsp Oregano
- 2 tsp Sea Salt
- 1/2 tsp Pepper
- 1/2 tsp Cayenne Pepper (more if desired)
- 1 cup Heavy Whipping Cream
- 2 cup Sour Cream
- 3/4 cup Salsa Verde
Creamy Tomatillo Dressing

Put in blender and mix
- 1 package Hidden Valley Ranch
- 1 cup mayo
- 1 cup cilantro, chopped
- 2 cloves garlic, chopped
- 3 tomatillos - peel off paper, chop
- 1/3 - 1/2 cups buttermilk, to consistency you want
- 1/4 tsp. cayenne pepper (optional)
Baked Pear Vanilla French Toast

That is the Baked Pear Vanilla French Toast I made and it was SO delicious
- 1 cup dark brown sugar
- 1/2 cup butter
- 2 T. water
- 3 fresh pears or 28oz. canned pears, drained (I used canned)
- 4 cups French bread, cut into small pieces (better to not use the crust)
- 1/2 cup pecans, finely chopped (I put pecans on half)
- 9 eggs
- 2 cups of milk or cream (I used 1 cup of milk, and 1 cup of heavy cream)
- 2 tsp. vanilla
- powdered sugar or maple syrup (we used both, but it is sweet enough as is).
Spicy Shrmp and Bok Choy Noodle Bowl

Heat a medium soup pot over medium-high heat
- 3 tablespoons vegetable oil, 3 turns of the pan
- 2 teaspoons crushed red pepper flakes
- 4 cloves garlic, chopped
- 2 inches ginger root, peeled and cut into very thin matchsticks or grated
- 1/2 pound shiitake mushroom caps, sliced, a couple of cups
- 1 medium bok choy, trimmed and cut into 3-inch pieces, then cut sticks lengthwise
- Salt and pepper
- 1 quart chicken broth
- 1 cup seafood stock, available on soup aisle or, 1 cup clam juice
- 1 1/2 pounds medium peeled and deveined shrimp
- 1/2 pound vermicelli (thin spaghetti)
- 4 scallions, cut into 3 inch pieces, then shredded lengthwise into thin sticks
