Fresh Peach Pie

This pie must have fresh peaches as they will not be baked
- For the Peaches
- 8 10 8 10 8 or 10 Peaches
- For the Crust
- 1 1 1 cube cold butter
- 1 1 1 cup flour
- 2 2 2 tbsp. sugar
- dash dash of salt
- few drops of almond extract
- For the Glaze
- 2 2 2 cups boiling water
- 2 1/2 2 1/2 1/2 cups of sugar
- 3/4 3/4 3/4 cup cornstarch
- 1 1/2 1 1/2 1/2 cups cold water
- 1/8 1/8 1/8 tsp. salt
- 1/4 1/4 1/4 cup lemon juice
Quick Curtido (Mexican Cabbage Slaw)

In a large bowl, toss together cabbage, onion, carrot, and jalapeño, if using
- 1/2 small (2-pound) green cabbage, cored and very thinly sliced (about 4 cups)
- 1/2 medium white onion, peeled and very thinly sliced (about 1/2 cup)
- 2 carrots, peeled and shredded (about 1/2 cup)
- 1 small jalapeño, ribs and seeds removed, minced (optional)
- 3 tablespoons apple cider vinegar
- 2 teaspoons sugar
- 1 teaspoon kosher salt
