Norma's Chocolate Decadence French Toast with Valrhona Sauce

From "The Best Thing I Ever Ate
- For the Home Made Brioche
- 1 (1/4 ounce) packet active dry yeast
- 2 tablespoons whole milk, warm
- 2 cups bread flour
- 2 tablespoons sugar
- 1 1/2 teaspoons salt
- 3 eggs, lightly beaten
- 12 tablespoons unsalted butter, at room temperature
- For the sauce
- 6 ounces valrhona bittersweet chocolate
- 1 cup water
- 3 1/2 tablespoons butter, cut into pieces and softened
- For the French Toast
- 1/4 cup sugar
- 1 teaspoon ground cinnamon
- 5 slices brioche bread (homemade preferred, but store bought ok)
- 3/4 cup warm milk
- 3 eggs
- 1/4 cup cocoa powder, with sugar (or sweetened cocoa powder like Ghiradelli)
- 4 tablespoons butter
Shrimp & Vegetable Tempura

Make the dipping sauce: Combine all ingredients in a bowl
- Dipping sauce:
- 1/2 cup low-sodium soy sauce
- 2 tablespoons rice wine vinegar
- 1 lemon, juiced
- Tempura:
- 1 pound large shrimp, peeled with tails on
- 1 cup rice flour, plus 1 cup for dusting
- 1 cup cold seltzer water
- 2 large egg yolks
- 1 teaspoon toasted sesame oil
- Kosher salt
- Peanut oil, for frying
- 2 red bell peppers, sliced into strips
- 2 avocados, peeled and sliced thick
- 1 lemon, sliced very thin
- 12 green beans
- 8 shiitake mushrooms, halved
- 4 scallions
Pizza Dough

Put yeast in warm water and allow to bloom for five minutes
- 1/4 C Warm Water
- 1 tsp Active Dry Yeast
- 1 C Cold Water
- 1 tsp Salt
- 3 C Bread Flour (+ extra for kneading)
- Olive Oil
Stuffed Peppers

Slice each jalapeno open lengthwise, then make a small crosswise cut at the stem end to form a T
- 12 jalapeno peppers (about 3 inches each)
- 2 cups milk
- 1 cup grated sharp cheddar cheese
- 2 tablespoons cream cheese, softened
- 1/4 cup prepared pulled pork
- 11/2 teaspoons chili powder
- 1 cup all-purpose flour
- 4 large eggs
- Kosher salt
- 2 cups breadcrumbs
- Vegetable oil, for frying
- Barbecue sauce, for dipping

- 2 TBL sugar
- 1 cup half & half (or light cream)
- 1/2 tsp vanilla extract
- 1/2 cup coarse salt or table salt(I used canning salt)
- ice
- gallon-sized Ziploc bag
- pint-sized Ziploc bag
Carmel Popcorn

Medium heat till boils. Pour over popcorn
- 1 cube of Butter
- 2 Cup Brown Sugar
- 1 Cup Karo Syrup
- 1 cup Sweetened Condensed Milk
- 1 Tsp. Vanilla
Turkey & Cheese Monte Cristo

On a work surface, lay out 2 slices of bread and spread with mayonnaise
- 3 slices white bread
- Mayonnaise, as needed
- 2 slices Gouda
- 2 slices turkey
- 3 large eggs, beaten
- 1/4 cup milk
- 2 tablespoons vegetable oil
- 1 tablespoon unsalted butter
- Strawberry slices, for garnish
- Orange wedges, for garnish
- Serving suggestion: Blackberry jam

- 2 cups whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1 small mashed ripe banana
- 1 cup skim milk
- 1 teaspoon vanilla extract
- 1/2 cup splenda (or agave/honey/sugar free syrup)

- 1/2 cup bread crumbs, preferably homemade
- 1 tablespoon light brown sugar
- 1 1/2 teaspoons ground cinnamon
- 1 tablespoon melted butter
- For the Caramelized Squash:
- 1 small butternut squash, peeled and cut into 1-inch cubes (about 3 cups)
- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 1 tablespoon ground cinnamon

- 1/4 teaspoon fresh grated nutmeg
- 2 tablespoons melted butter
