- 24 ounces (1 lb 8 oz) dry spaghetti
- 4 tablespoons extra-virgin olive oil
- 2 lbs ounces pancetta or slab bacon, cubed or sliced into small strips
- 8 garlic cloves, finely chopped
- 4 large eggs
- 2 cup freshly grated Parmigiano-Reggiano, plus more for serving
- Freshly ground black pepper
- 1 handful fresh flat-leaf parsley, chopped
Chicken Noodle Soup

- 3 cups Chicken Broth
- 2 cups Celery
- 2 Cups Carrots
- 1 Cup Diced Onions
- 2 10oz Cream of Chicken Soup
- 1 Cup Whole Milk
- 3 cups diced chicken
- 1/2 to whole bag of thick country noodles
Artichoke Wonton Cups

Coat one side of wrappers with non-stick cooking spray
- 1 Cup grated Parmesan Cheese
- 1 Cup Mayo
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic powder
- 2 cups Mozzarella Cheese
- 14 oz canned Artichoke hearts drain and chopped
- 1 package Won ton Wrappers (I used egg roll wrappers and cut them in 4)
- I also added a few Tb or red onion and a crushed garlic clove
Tempura Batter Recipe

• Sift together the dry ingredients
- 1/2 cup flour
- 1/2 cup cornstarch
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 egg (I prefer 1 1/2 egg whites)
- 2/3 cup ice water (I prefer seltzer water)
- Yellow food coloring (optional)
- Oil for deep frying
- Your choice of dippers; shrimp, scallops, chunky-cut chicken and vegetables are good.

- 1 pound bittersweet chocolate, chopped into small pieces
- 1 cup (2 sticks) unsalted butter
- 9 large eggs, separated
- 3/4 cup granulated sugar, plus 1 tablespoon

- Confectioners' sugar, for dusting

1. Cook pasta according to package directions
- 2 pounds (1 kilo) pasta – baby shells or penne are best, medium shells or ridged pasta is also okay)
- 1/2 cup butter
- 1 small onion, finely diced
- 1/2 cup all-purpose flour
- 2 cups cream (15-30%)
- 1 1/2 cups milk
- salt and pepper to taste
- 1/4 teaspoon ground all-spice (optional)
- 1 cup finely grated Cheddar
Roasted Chicken with Seasonal Vegetables

1. Preheat the oven to 350°
- 1 Whole chicken
- 1 Sprig rosemary
- 6 Sprigs thyme
- 1 Sprig sage
- 8 Medium garlic cloves
- 2 Tablespoons EVOO
- 1/2 Pound carrots, cut into 3/4-inch pieces (about 2 large carrots)
- 1/2 Pound turnips, cut into 3/4-inch pieces (about 2 medium turnips)
- 1/2 Pound rutabaga, cut into 3/4-inch cubes (about 1 medium rutabaga)
- 1/2 Pound cippolini onions, peeled (about 8 to 10 onions)
- 1/2 Pound of brussels sprouts, havled (about 10 brussels sprouts)
- 4 Tablespoons (1/2 stick) unsalted butter
- Salt & freshly ground pepper
Creamy Cucumber Dill Dip

Beat the cream cheese until smooth
- 8 ounces softened cream cheese
- 1 cup mayonnaise
- 2 medium peeled and chopped cucumbers
- 3 tablespoons sliced scallions
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoons freshly snipped dill weed
- Dash cayenne pepper to taste
- Salt

coconut Crab Cakes with Coconut Basil Mayonnaise

Coconut Crab Cakes 1. Heat oil in a saute pan, add onion and celery until onion is translucent
- Coconut Crab Cakes
- 2 Tablespoons canola oil (plus a bunch more for frying)
- 1/2 Medium onion, finely diced
- 1 Stalk celery, finely diced
- 1 pound lumb crabmeat
- 1/2 Cup shredded coconut (sweetened or unsweetened, I chose sweetened)
- 2/3 Cup mayonnaise
- 1 Teaspoon Dijon mustard
- 2 Tablespoons chives, finely minced
- 2 Tablespoons parsley, chopped
- 5 Cups panko bread crumbs
- Salt and pepper
- 1/2 Cup all-purpose flour
- 3 Large eggs, beaten
- Diced tomatoes, for garnish (whoops, didn't garnish for that pic, did I?)
- Chives for garnish
- Coconut Basil Mayonnaise
- 1 Cup mayonnaise
- 1/3 Cup unsweetened shredded coconut
- 1 Tablespoon lime juice
- 1 Tablespoon basil leaves,chopped
- 1 Teaspoon chili garlic paste (more if you want it spicy, the 1 teaspoon will not make it spicy at all)
Wagyu Meatballs

1 In a bowl, mix the ground meat with all remaining ingredients, until just combined
- 1 pound (0.9 kg) Wagyu (or other) ground beef
- 1/4 cup (30 g) dried bread crumbs
- 2 to 3 ounces (60 to 90 ml) milk (enough to soak the bread crumbs)

- 3 tablespoons (7 grams) chopped fresh parsley
