Grilled Portobello Mushrooms Stuffed with Parmesan Mashed Potatoes

1-Brush the grill grates lightly with the safflower oil, Prepare a hot fire in a gas or charcoal grill
- Safflower Oil or canola oil, for oiling the grill
- 1 recipe Classic Mashed Potatoes (see recipe)
- 1/4 c. olive oil
- 2 T. balsamic vinegar
- 8 portobello mushroom caps, cleaned and stems removed
- 1 t. salt
- 1/2 t. freshly ground black pepper
- 1 c. sour cream
- 1/4 c. grated Parmesan cheese
- 2 scallions, trimmed and chopped
Mimis Peanut Butter Pie

For crust, crush graham crackers and butter
- Crust:
- 8 oz. cream cheese, softened
- 16 oz. peanut butter
- 1 (14 oz.) can sweetened condensed milk
- 9 oz. Cool Whip
- 1 t. vanilla
- 1 t. lemon juice
- 4 heath bars, crushed
- Additional Cool Whip
- 1/3 Box chocolate graham crackers
- 6 T butter, melted
Susan Reese's Caramel Rolls

Heat crisco, sugar, and water, and salt, stirring until sugar dissolves and crisco melts
- Caramel Roll Topping:
- 1 c. dark brown sugar
- 1 stick butter
- 1/4 c. dark karo
- pour into pan; bring to boil, stirring

- 1 c. crisco
- 2 T. sugar
- 3/4 c. water
- 1 1/2 T. salt
- 2 pkg. yeast

Carrot Cake with Buttermilk Glaze and Cream Cheese Frosting

Sift flour sugar, soda, cinnamon and salt into a bowl
- BUTTERMILK GLAZE:
- 2 c. flour
- 1 1/2 c. sugar
- 2 t. soda
- 2 t. cinnamon
- 1/2 t. salt
- 3 eggs
- 3/4 c. oil
- 3/4 c. buttermilk
- 2 t. vanilla
- 8 oz. can crushed pineapple
- 2 c. finely chopped carrots
- 1 c. walnuts and/or pecans chopped
- 1 can (3 1/2oz) flaked coconut
- 1 c. sugar
- 1/2 t. baking soda
- 1/2 c. buttermilk
- 1/2 c. butter
- 1 T. corn syrup
- 1 t. vanilla
- FROSTING:
- 1/2 c. butter
- 4 c. powdered sugar
- 8 oz. cream cheese
- 1 t. vanilla
- 1 T. orange juice
- 1 t. grated orange peel

- 2 (12 oz.) bags of coleslaw mix
- 1 small onion, chopped
- 6 bacon slices, cooked and crumbled

- 1 c. crumbled blue cheese

Combine brown sugar, butter, and corn syrup in a small heavy saucepan
- 1/4 c. firmly packed brown sugar
- 3 T. Butter
- 2 T. light corn syrup
- 1/2 c. crunchy peanut butter
- 1/3 c. whipping cream
- 1 lg. egg, slightly beaten
- 2 t. vanilla extract
