  • 1 c. wild rice
  • 2 c. chicken broth
  • butter
  • salt and pepper to taste
  • 3 oz. can mushrooms
  • 6 chicken breast halves
  • 1/2 pkg. dry onion soup mix
  • 1 can mushroom soup
  • paprika



Step 1

Soak wild rice overnight. Drain rice. Pour chicken broth over rice in large flat casserole. Dot with butter, salt, and pepper. Drain can of mushrooms and add mushrooms to casserole. Place chicken breasts over rice. Sprinkle onion soup mix over all. Dilute mushroom soup with a little water and spoon over each breast. Sprinkle with paprika. Cook uncovered at 350 for 1 hour, then cook covered 1/2 hour longer. A more economical, but ver tasty change is to use Uncle Ben's long grain and wild rice mix instead of the wild rice Do not soak the Uncle Ben's rice mixture overnight.
