Spaghetti Sauce

Saute onion, garlic, and celery in oil
- 1/2 c. chopped onions
- 2 garlic clives, minced
- 1/2 c. chopped celery
- 1/4 c. best quality olive oil
- 2 (20 oz.) can undrained Itallian plum tomatoes, chopped
- 2 (12oz.) cans tomato paste
- 1 T. salt
- 2 t. sugar
- 1 T. chopped fressh oregano or 1 t. dried
- 1/4 t. pepper
- 1/2 c. chopped parsley
- 1/2 c. freshly grated Parmesan or Romano cheese
- 2 c. Mushrooms, sliced and sauteed
- 1 1/2 lbs. Italian sausage, cooked, drained, and seasoned
- 1/2 lb. ground beef, cooked, drained, and seasoned

Apple Walnut Pie

Preheat oven to 350. Prepare a 9" pie crust and bake until almost done, about 12-15 minutes
- FILLING
- 2 1/2 lbs. Golden Delicious apples, peeled, cored, and thinly sliced (about 5-6 medium)
- 2 T. lemon juice
- 1/2 t. grated lemon zest
- 1/2 t. ground nutmeg
- 1 1/4 t. ground cinnamon
- 1 c. sugar
- 3 T. cornstarch, blended w/ 1/4 c. cold water
- TOPPING
- 3/4 c. flour
- 3/4 c. dard brown sugar, firmly packed
- 3/4 c. chopped walnuts
- 1/2 c. unsalted butter, softened
- 1 c. heavy whipping cream, whipped to soft peaks
New Potato Casserole

Wash and cube potatoes (don't peel)
- 12 medium new potatoes
- salt & pepper
- 16 slices crumbled bacon
- 1/2 c. melted butter
- 2 c. cheddar cheese
- 1/4 c. parsley, chopped, for garnish
Pumpkin Butterscotch Muffins

In a lg. bowl, mix flour, sugars, ginger, mace, cinnamon, cloves, baking soda, baking powder, and salt
- 1 3/4 c. flour, sifted
- 1/2 c. firmly packed light brown sugar
- 1/2 c. sugar
- 1/2 t. ground ginger
- 1/2 t. ground mace
- 1 t. ground cinnamon
- 1/8 t. ground cloves
- t t. baking soda
- 1/4 t. salt
- 2 lg. eggs
- 1 c. canned pumpkin
- 1/2 c. (1 stick) butter, melted
- 1 c. butterscotch chips
- 1/2 c. chopped pecans, toasted (optional)
Brownie Cupcakes

- 6 T. unsalted butter
- 11 oz. best quality semi-sweet chocolate, coarsely chopped
- 3 lg. eggs
- 1 c. sugar
- 3/4 c. flour
- 1/4 c. unsweetened cocoa
- 1/8 t. baking soda
- 1 c. coarsely chopped walnuts (optional)
- Nonstick cooking spray

- 1/2 t. ground cumin
- 2 t. ground ginger
- 1 t. crushed red pepper flakes

- 3 c. whole almonds or cashews

1. Set a steamer basket in a saucepan filed with 1"water
- 1 sugar pumpkin (about 4 lbs.), peeled, seeded, and cut into 2" cubed

- 16 Lasagna noodles
- 2 (10 oz.) pkgs. frozen, chopped spinach, drained well
- 4 c. diced chicken
- 4 c. grated cheddar cheese
- 2/3 c. finely diced onion
- 1/2 t. nutmeg
- 1 T. flour
- 1 t. salt
- 1/2 t. pepper
- 1 T. soy sauce
- 2 cans cream of mushroom soup
- 16 oz. sour cream
- 9 oz jar sliced mushrooms, drained
- 2/3 c. mayonnaise
- Topping:
- 2 c. grated Parmesan
- 4 T. butter
- 2 c. chopped pecans (or sliced almonds)
White Chocolate Brownies
