Criolla's Barbecue Shrimp

Thaw shrimp, if frozen. Sprinkle salt over shrimp
- 1 lb. fresh or frozen peeled and deveined lg. shrimp
- 1/8 t. salt
- 1/2 c. butter
- 1 T. water
- 1 T lemon juice
- 1 T. worcestershire sauce
- 1 1/2 t. freshly ground pepper
- French bread

- 20 lg. basil leaves
- 20 uncooked medium shrimp, peeled and deveined
- 1/4 c. barbecue sauce

- 2/3 c. sugar
- 1/3 c. strong brewed coffee

- 2 c. granulated sugar
- 1 1/3 c. vegetable oil
- 3 lg. eggs, room temperature
- 1 t. vanilla
- 2 c. flour
- 2 t. baking soda
- 1 1/2 t. kosher salt
- 1 lb. carrots, grated
- 1 c. raisins
- 1 c. chopped walnuts
- FOR THE FROSTING
- 3/4 lb. cream cheese at room temperature
- 1/2 lb unsalted butter at room temperature

- 1 lb. confectioners' sugar, sieved

- 4 T. shortening, divided

- 4 (1 oz.) semmisweet chocolate baking squares, chopped
- 1/2 c. toffee bits

- 1/2 t. salt
- 1/2 t. celery salt
- 1/2 t. dried oregano, crushed
- 1/2 t. dried thyme, crushed
- 1/2 t. paprika
- 1/4 t. ground red pepper
- 1 clove garlic, minced
