  • 1 teaspoon Maggi seasoning
  • 1 teaspoon rice wine vinegar
  • 1/2 cup brown sugar
  • 4 ounces white button mushrooms, steam removed and quartered
  • 2 - 3 scallions diced

1. Heat oven to 350 degrees

  • 2 tablespoons extra virgin olive oil
  • 12 oz. skinless, boneless chicken thighs, cut into 1 1/2 inch pieces
  • 8 oz. cooked ham, cubed
  • 8 oz. kielbasa, cut into 1/2 inch pieces
  • 2 stalks celery, finely chopped
  • 1 medium red onion, cut into thin wedges
  • 3 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes, untrained
  • 1 cup uncooked converted rice
  • 1 cup reduced sodium chicken broth
  • 1 medium green bell pepper, chopped
  • 2 teaspoons Cajun (Creole) seasoning
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire
  • 2 bay leafs
  • 1 lb fresh or frozen peeled and deveined large shrimp with tails (thawed if frozen)
  • 6 green onions, finely chopped 1/2 cup chopped fresh flat-leaf parsley (optional)
