Mongolian Beef

Slice beef very thin, approximately 1/4 to 3/8 inches thick
- 8 ounces flank steak or beef tenderloin
- 4 tablespoons corn starch
- 4 tablespoons vegetable oil
- 1 teaspoon sesame oil
- 1/2 teaspoon fresh grated ginger
- 2 garlic cloves minced
- 1/3 cup soy sauce
- 1/3 cup water
- 1 teaspoon Maggi seasoning
- 1 teaspoon rice wine vinegar
- 1/2 cup brown sugar
- 4 ounces white button mushrooms, steam removed and quartered
- 2 - 3 scallions diced
Jambalaya

1. Heat oven to 350 degrees
- 2 tablespoons extra virgin olive oil
- 12 oz. skinless, boneless chicken thighs, cut into 1 1/2 inch pieces
- 8 oz. cooked ham, cubed
- 8 oz. kielbasa, cut into 1/2 inch pieces
- 2 stalks celery, finely chopped
- 1 medium red onion, cut into thin wedges
- 3 cloves garlic, minced
- 1 can (28 oz) diced tomatoes, untrained
- 1 cup uncooked converted rice
- 1 cup reduced sodium chicken broth
- 1 medium green bell pepper, chopped
- 2 teaspoons Cajun (Creole) seasoning
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire
- 2 bay leafs
- 1 lb fresh or frozen peeled and deveined large shrimp with tails (thawed if frozen)
- 6 green onions, finely chopped 1/2 cup chopped fresh flat-leaf parsley (optional)
Cauliflower Cheese Soup (Slow Cooker)

In a 6-quart slow cooker add the chicken broth, cauliflower, leeks, garlic and pepper
- Add at the end:
- 1 (32 oz.) box chicken broth
- 1 head cauliflower cut into chunks, green part discarded
- 1 cup diced leeks
- 2 garlic cloves
- 1/4 tsp. pepper
- 3 cups shredded sharp cheese
- 1/2 cup heavy cream
- salt to taste
- For serving:
- (optional)
- 6 slices of bacon, cooked and crumbled
- chopped chives
- additional shredded cheese
Parmesan Crusted Chicken

Prepare pasta according to package directions
- 1 cup plain breadcrumbs
- 2 tablespoons flour
- 1/4 cup parmesan cheese
- 1 cup milk
- 6 slices chicken breasts, 1/2 inch thick (chicken tenders)
- vegetable oil (frying)
- 2 cups dry bow tie pasta or fettuccine pasta
- 2 tablespoons butter
- 3 tablespoons olive oil
- 2 teaspoons crushed garlic
- 1/2 cup white wine (Chablis)
- 1 //4 cup water
- 2 tablespoons flour
- 3/4 cup half-and-half
- 1/4 cup sour cream
- 1/2 teaspoon salt
- 1/8 teaspoon basil leaves
- 3/4 cup milk asiago cheese (finely grated)
- 4 broccoli florets (lightly steamed)
- 2 white mushrooms (quartered lightly steamed)
Hash Brown Breakfast Casserole

This is a great use for left over Holiday Ham
- Beat together:
- 1 (26 oz) bag shredded hash browns
- 2 cups chopped ham
- 2 cups shredded cheddar cheese
- 2 cups Monterey Jack cheese
- Layer in greased 9x13 pan ending with cheese
- 6 eggs
- 1/2 cup milk
- 1 teaspoon seasoned salt
Chicken Parmesan for Two

Preheat oven to 400 degrees
- 1 cup Italian-seasoned breadcrumbs
- 2 tablespoons flour
- 1/2 teaspoon red pepper
- 2 skinless, boneless chicken breasts
- 2 egg wites, lightly beaten
- 1 tablespoon olive oil
- 1 1/2 cups pasta sauce
- 1 cup (4 oz.) shredded mozzarella
- 1/4 cup grated Parmesan
Lemon Meringue Pie

Preheat oven to 350 degrees
- 1 (9-inch) baked pastry shell or graham cracker crust
- 3 eggs, separated
- 1 (14 oz.) can Eagle Brand
- 1/2 cup lemon juice
- Few drops of yellow food coloring (optional)
- 1/4 teaspoon cream of tartar
- 1/3 cup sugar
