Chicken Noodle Soup

- Broth:
- 8 large bone-in, skinless chicken thighs (about 3 lbs.)
- 2 large onions, peeled and cut into wedges
- 2 carrots, cut into 1-inch pieces
- 2 ribs celery, cut into 1-inch pieces
- 4 cloves garlic, smashed
- 2 bay leaves
- 15 whole peppercorns
- 2 springs fresh thyme
- Soup:
- 2 carrots, peeled and sliced
- 2 ribs celery, sliced
- 2 small chicken bouillon cubes
- 1/2 teaspoon salt
- 4 oz. broad eggs noodles
- 1/4 cup parsley, chopped
Layer Salad

 Boil eggs until hard boiled, peel, cool and slice – set aside  Cook bacon until crip, cool and crumble â
- Dressing:
- Bag of Lettuce
- 1 cup chopped celery
- 1 can water chestnuts, chopped
- 1 oz. bag frozen peas unthawed
- 3 large tomatoes, chopped into bite-size chunks
- 2 cups mayonnaise (lowfat or regular)
- 2 TBSP sugar
- Topping:
- 3-4 sliced hard boiled eggs (if desired)
- 2 cups shredded cheddar cheese
- 3-5 slices crumbled cooked bacon
Patty Labelle's Macaroni and Cheese

Cook elbow macaroni according to directions for casserole
- 1 tablespoon vegetable oil
- 1 lb. elbow macaroni
- 1 stick plus 1 tablespoon butter
- 1/2 cup shredded Munster cheese
- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 2 cups half-and-half
- 1 cup cubed Velveeta cheese
- 2 large eggs, lightly beaten
Banana Crumb Muffins

Preheat oven to 375°F. Lightly grease 10 muffin cups, or line with muffin papers
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 bananas, mashed
- 3/4 cup white sugar
- 1 egg, lightly beaten
- 1/3 cup butter, melted
- 1/3 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1/8 teaspoon ground cinnamon
- 1 tablespoon butter
Yellow Tomato Soup with Goat Cheese Croutons

- 3 lbs. yellow tomatoes, halved (9 medium)
- 2 tablespoons olive oil, divided
- 4 garlic cloves, minced, divided
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon minced rosemary
- 1 teaspoon minced fresh thyme
- 1 large onion, chopped
- 1 cup vegetable broth
- 1/2 cup milk
- 1/2 cup heavy whipping cream
- 12 slices fresh bread baguette (1/2 inch thick)
- 1 tablespoon olive oil
- 2 tablespoons prepared pesto
- 1/2 cup crumbled goat cheese
- 1 teaspoon pepper
Mocha Frosting

- 1/2 cup powdered sugar
- little bit of coffee
- 2 tbsp. cocoa
- 1/2 tsp vanilla

- 1 cup fat-free low-sodium chicken or mushroom broth
- 1 tablespoon Worcestershire sauce

Raspberry Romaine Salad (can use strawberries)

- 1 cup raspberries, rinsed
- 2 kiwi, peeled and sliced
- 1/2 cup macadamia nuts, chopped

- 2 tablespoons raspberry jam

Old Fashioned Bread Pudding *GOOD*

- 2 eggs, beaten
- 3/4 cup sugar
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/2 cup raisins
- 3 tablespoons butter
