Lemon Pudding Bundt Cake

Preheat oven to 325 degrees F
- 1 (18.25-ounce) package yellow cake mix
- 1 (4-serving size) package instant lemon pudding and pie filling
- 4 eggs
- 2/3 cup vegetable oil
- 2/3 cup water
- 1 cup confectioners' sugar
- 2 teaspoons orange juice
- 1 teaspoon lemon juice
- 1 teaspoon lime juice
Ravioli Casserole (Slow Cooker)

Brown ground beef with onion and garlic
- 1 1/2 lbs. lean ground beef
- 1 onion, chopped
- 1 clove garlic, minced
- 1 (15 oz.) can tomato sauce
- 1 can stewed tomatoes
- 1 tsp. oregano
- 1 tsp. Italian seasoning
- salt/pepper
- 10 oz. frozen spinach, thawed (I used fresh spinach)
- 16 oz. bowtie pasta, cooked
- 1/2 cup parmesan cheese, shredded
- 1 1/2 cup mozzarella, shredded
Shrimp Gumbo

In a soup pot, melt butter over medium heat
- 1/2 cup (1 stick) butter
- 1 cup chopped onion
- 1 cup sliced celery
- 1 medium-sized green bell pepper, chopped
- 1 teaspoon chopped garlic
- 2 tablespoons flour
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 2 cans diced tomatoes, undrained
- 1 cup frozen okra, thawed
- 1 cup water
- 1 lb. large shrimp, peeled, deveined, and tails removed
Tilapia, Broiled Tilapia Parmesan

Preheat broiler. Grease a broiling pan or line pan with aluminum foil
- 1/2 cup Parmesan cheese
- 1/4 cup butter, softened
- 3 tablespoons mayo
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon dried basil
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon onion powder
- 1/8 teaspoon celery salt
- 2 lbs. tilapia fillets
Beef Tips, Slow Cooker

Place beef in 5-quart slow cooker
- 1 1/2 lbs. beef tips or cubed beef stew meat
- 1/2 lbs. mushrooms, quartered
- 1/2 onion, cut into slivers
- 1 package dry onion soup mix
- 1 can cream of mushroom soup
- 1 can beef broth
- 1/4 cup red wine
- 1 tablespoon Worcestershire sauce
Strawberry Shortcake Trifle

1. In a large serving bowl or trifle dish, place half the angel food cake pieces on the bottom of bowl
- 5 cups (~2 pints), fresh strawberries, sliced
- 2 cups fresh blueberries
- 1/2 cup store-bought prepared strawberry glaze
- 1 (14oz) ready baked angel food cake, cut in half and into 1-inch cubes
- 1 (8oz) container fat-free frozen Cool Whip, thawed
- 2 snack packs of already prepared fat-free vanilla pudding
Chicken Alfredo (Slow Cooker)

In the crock of a slow cooker, stir together the chicken cubes and Alfredo sauce
- 4 skinless, boneless chicken breast halves - cubed
- 2 (16 ounce) jars Alfredo pasta sauce
- 4 slices Swiss cheese
- 3 tablespoons grated Parmesan cheese
- 1 teaspoon garlic powder
- salt and pepper to taste
Lady Bird Johnson's Famous Lemon Bundt Cake

Preheat oven to 325 degrees
- Cake:
- 1 cup plus two tablespoons butter, room temperature
- 1 2/3 cups sugar
- 9 large eggs
- 3 1/4 cups cake flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons lemon juice
- Zest of one lemon
- 1 cup milk
- Lemon Glaze:
- 2 cups powdered sugar
- 1/4 cup butter, melted and cooled
- 1 lemon, juiced and zested
- Additional lemon juice, for desired drizzling consistency
- Additional powdered sugar for dusting is optional
