Balsamic Glazed Caprese Chicken

Preheat oven to 410. Season each thigh with the oregano, basil, salt and pepper
- Optional glaze:
- 6 skinless, bone in chicken thighs
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- pepper to taste
- 1 tablespoon olive oil or cooking oil spray
- 2 tablespoons minced garlic
- 1/3 cup balsamic vinegar
- 2 1/2 tablespoons brown sugar, packed
- 1 1/2 cups grape or cherry tomatoes, divided
- 8 oz. fresh mozzarella cheese, cut into 6 x 1/2-inch slices

Lemon Bars

Crust: Preheat oven to 350 degrees
- Crust:
- 1 1/2 cups flour
- 1/2 cup confections' sugar, plus extra for dusting
- 1 1/2 sticks cold butter, cut into small pieces
- Filling:
- 2 cups granulated sugar
- 1/4 cup flour
- 1 teaspoon baking powder
- Pinch of salt
- 4 large eggs, slightly beaten
- 2 teaspoons grated lemon peel
- 1/2 cup lemon juice
Strawberry-Rhubarb Crisp Bars

Heat oven to 375 degrees F
- 1 cup rolled oats
- 3/4 cup + 2 tablespoons all-purpose flour
- 1/2 cup light brown sugar
- Heaped 1/4 teaspoon table salt

Four Cheese Baked Penne

- 16 oz. penne pasta, cooked
- 1 (15 oz.) container Ricotta cheese
- 1 (16 oz.) package Mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup grated Romano cheese
- 1/2 cup milk
- 1 (14 .5 oz.) can diced tomatoes with Italian herbs
- 1 (8 oz.) can tomato sauce
- 2 cups sliced zucchini
- 1/3 cup chopped fresh parsley
- 1/3 up chopped fresh basil
Manicotti Cheese Bake

Partially cook manicotti shells in boiling salted water for 15 minutes
- 8 manicotti shells
- 2 beaten eggs
- 3 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 1/2 lbs. ground beef
- 1/2 cup finely chopped onion
- 1/2 teaspoon garlic powder (or 1 minced garlic clove)
- 2 cups water
- 2 (6 oz.) cans tomato paste
- 1 1/2 teaspoon dried Italian seasoning
- 1 teaspoon sugar
- 1 1/2 teaspoon salt

- 1/2 cup milk
- 1 teaspoon soy sauce
- Dash ground black pepper
- 4 cups cooked cut green beans

Maple Pork Tenderloins (Roasted)

- Marinade:
- 1 1/2 lbs. pork tenderloin
- 1/2 cup pure maple syrup
- 2 tablespoons soy sauce

- 1 cup ketchup
- 3/4 cup packed light brown sugar
- 1/2 cup white vinegar
- 1/2 cup water
- 2 tablespoons yellow mustard
- 2 teaspoons salt
Skillet Creamy Ranch Pork Chops & Rice

Heat the oil in a 10-inch skillet over medium-high heat
- 1 tablespoon vegetable oil
- 4 boneless pork chops, 3/4-inch thick
- 1 can (10 3/4 oz) Campbell's Condensed Cream of Mushroom Soup
- 3/4 cup milk
- 1 package (1 oz) ranch salad dressing mix
- paprika
- Ranch-Style Rice, for serving + prepared as follows: heat 2 1/4 cups water + the remaining salad dressing mix in a 3-qt saucepan over medium-high heat to a boil. Stir in 1 cup uncooked regular long-grain white rice + cook according to pkg directions.
