Brined Potatoes

Dissolve the kosher salt in the two quarts of water
- Baking Potatoes
- 2 quarts Water
- 1 cup kosher salt
- Olive oil

Lowcountry Spicy Shrimp

Heat butter, garlic, Worcestershire sauce, lime juice and lime zest in large skillet over medium heat until bubbly
- 1/4 ¼ cup butter
- 4 large garlic cloves, minced
- 1 1/2 1 ½ tablespoon Worcestershire sauce
- 2 tablespoons lime juice
- 1-teaspoon lime zest
- 1 pound shrimp
- 3 tablespoons chopped parsley
- 1/4 to 1/2 ¼ to ½ teaspoon hot pepper sauce
Ginger Glazed Chicken

1. Place chicken in a large bowl with soy sauce and half of the garlic, ginger and chile flakes
- 8 boneless, skinless chicken thighs (about 1-1/2 pounds total)
- 2 tablespoons light soy sauce
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh ginger
- 1 teaspoon dried chile flakes
- 1 tablespoon vegetable oil
- 1/4 cup sugar
- 2 tablespoons Thai Fish Sauce (see note)
- Chopped fresh cilantro, for garnish
Sausage balls

Place everything in a bowl and mix
- 2 cups bisquick
- 1 pound sausage
- 10 ounce pack of shredded cheese
Jicima Orange Avocado Salad

Mix all ingredients together
- 1 small jicama, peeled, sliced and julienne
- 2 oranges, supremed (or one can mandarin oranges drained and dried, or a combinaton)
- 1 small red onion, diced
- 1 jalapeno pepper, stemmed, seeded, minced
- 1 tablespoon honey
- 1 large handful chopped cilantro
- 2 avocados, cut into chunks
- juice of one lime
- salt and pepper to taste
Smoke mouth Chili

Cut meat in ¾ inch chunks
- 6 pounds beef
- 1 1/2 1 ½ cup Olive oil
- 1 1/2 1 ½ quart blended tomatoes (56 ounces crushed tomatoes)
- 2 cups water (1 cup beef broth and 1 cup chicken broth)
- 1/2 ½ cup chili powder
- 2 tablespoons oregano
- 3 tablespoons ground cumin
- 3 tablespoons salt
- 1 cup chopped chili peppers (5 ground dried ancho peppers)
- 1 cup chopped onions
- 2 tablespoons chopped garlic
- 2/3 cup Masa Harina
- 2 teaspoons liquid red pepper

Combine the oil and flour in a large cast-iron Dutch oven over medium heat
- 1-cup vegetable oil
- 1-cup flour
- 1 1/2 1 ½ cup chopped onions
- 1 cup chopped celery
- 1 cup chopped bell pepper
- 1 pound smoked sausage, Andouille, cut crosswise into ½ inch slices
- 1 1/2 1 ½ teaspoon salt
- 1/4 ¼ teaspoon cayenne
- 3 bay leaves
- 6 cups water
- 1-pound boneless chicken meat, cut into 1-inch chunks (I double the recipe and use a whole chicken)
