Black bean and corn chili

1. Cook beef in large pot over medium heat 5 minutes or until browned, stirring occasionally
- 2 lb. ground beef (85% lean)
- 2 large onions, chopped
- 4 ribs celery, chopped (1 1/2 cups)
- 4 medium garlic cloves, minced
- 2 (28-oz.) cans whole tomatoes
- 1 large green bell pepper, chopped
- 2 jalapeño chiles, minced
- 1/4 cup chili powder
- 2 teaspoons salt
- 2 teaspoons sugar
- 2 teaspoons steak sauce
- 1 (15-oz.) can kidney beans, drained, rinsed
- 1 (15-oz.) can black beans, drained, rinsed
- 1 cup frozen corn
Pork Chops with Oranges and Parsley

1. In a large skillet, heat oil over medium-high
- 1 tablespoon vegetable oil
- 4 bone-in pork chops (1 inch thick; about 2 1/2 pounds total)
- Coarse salt and ground pepper
- 2 strips orange zest, plus 1/2 cup orange juice and 2 oranges, peel and pith removed and flesh cut into segments (3 oranges total)
- 1/4 cup fresh parsley leaves, chopped
Sandra’s Corn and Jalapeño Casserole

Mix well, place in dish and bake at 375 for 30 to 45 minutes
- 3 cans White Shoe peg Corn
- 8 ounces Cream Cheese
- I Jalapeno chopped, de-seeded and de-veined

- 1/2 ½ stick butter
Spiced Pecans

Heat oven to 325 degrees. Line a large cookie sheet with foil, set aside
- 2 cups pecan halves
- 1/4 ¼ cup butter
- 1/4 ¼ cup sugar
- 1 teaspoon cinnamon
- 1/4 ¼ teaspoon nutmeg
- 1/4 ¼ teaspoon ground cloves
Blackened Grouper

• Combine flour and spices then mix well
- 1 tablespoon all purpose flour
- 1 teaspoon onion powder
- 1/2 teaspoon powdered thyme
- 1/2 teaspoon powdered oregano
- 1/2 teaspoon salt
- 1/4 teaspoon chili powder
- 1/4 teaspoon freshly ground white pepper
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon freshly ground paprika
- 1 pound red grouper fillets skinned
- 4 tablespoons melted butter
- 1 tablespoon oil for frying
Sour Cream Chicken Enchiladas

Preheat oven to 350°F. Cook and chop or shred chicken breasts; set aside
- 2 cups cooked and shredded or chopped chicken
- 2 cloves fresh garlic, minced
- 1/2 cup onion, finely chopped
- 1/2 cup green pepper, finely chopped
- 2 tablespoons olive or avocado oil
- 1 tablespoon butter
- 2 heaping tablespoons flour
- 2 cups chicken broth
- 1-2 small cans chopped green chilies
- Approximately 1/2 teaspoon sea salt
- 4 cups grated Monterrey Jack cheese
- 1/2 cup sour cream
- Couple packages of flour tortillas
- Paprika

Homemade Ranch Dressing

Mash together the garlic and 1/4 teaspoon salt in a medium bowl
- 2 • 2 teaspoons minced garlic (4 tablespoons)
- 1 1/4 • 1 1/4 teaspoons salt (2 Tablespoons)
- 3/4 • ¾ cup mayonnaise (3 ¾ cups)
- 1/2 • 1/2 cup buttermilk (5 cups)
- 1 • 1 tablespoon plus 1 teaspoon finely chopped celery leaves (6 Tablespoons)
- 1 • 1 tablespoon plus 1 teaspoon finely chopped green onions
- 1 • 1 tablespoon plus 1 teaspoon finely chopped fresh parsley
- 2 • 2 teaspoons fresh lemon juice (3 Tablespoons)
- 1 • 1 tablespoon finely chopped shallot (5 Tablespoons)
- 3/4 • 3/4 teaspoon freshly ground black pepper (2 tablespoons)
Chocolate, Orange and Whisky Mousse

- Ingredients (Mousse):
- 8 ounces (250g) plain chocolate which has been broken into smaller pieces.
- 4 large eggs - separated into whites and yolks.
- 2 tablespoons Scotch whisky. Note that US tablespoons are smaller than those in the UK so you may want to adjust this UK measurement!
- 2 tablespoons double cream (whipping cream). If you adjust the amount of whisky, add a bit more cream too!
- Finely grated rind of one orange.
- Ingredients (topping):
- 5 fluid ounces (150ml or a generous half cup) double cream (whipping cream).
- 1 tablespoon Scotch whisky.
- Pinch of caster (fine) sugar.
- Finely cut orange rind for decoration.
