1. Set two racks in the middle of the oven
- For the chocolate wafers:
- 1 1/4 cups all-purpose flour
- 1/2 cup unsweetened Dutch process cocoa*
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 to 1 1/2 cups sugar**
- 1/2 cup plus 2 tablespoons (1 1/4 sticks) room-temperature, unsalted butter
- 1 large egg
- For the filling:
- 1/4 cup (1/2 stick) room-temperature, unsalted butter
- 1/4 cup vegetable shortening
- 2 cups sifted confectioners sugar
- 2 teaspoons vanilla extract

Preheat oven to 450 degrees
- 2 bone-in, skin-on chicken breasts (6 to 8 ounces each)
- 6 teaspoons olive oil
- Coarse salt and ground pepper
- 2 teaspoons fresh thyme leaves
- 1 1/2 pounds Yukon gold potatoes, cut into 3/4-inch pieces
- 2 large shallots, diced small
- 2 garlic cloves, minced
- 1/2 pound spinach, trimmed, washed, and coarsely chopped
