Remove papery outer skin from garlic (do not peel or sepreate cloves) Cut top off bulb
- 1 whole garlic bulb
- 1 1/2 tsp plus 1 Tbs olive oil, divided
- 1 Tbs minced fresh rosemary or 1 tsp dried crushed rosemary
- 1 Round loaf sourdough bread (1 lb)
- 1 Round 8oz of Brie or Camembret Cheese
- 1 Loaf French bread baguette sliced and toasted
- Red & Green grapes
Pasta Caprese

Whisk the olive oil, lemon juice, shallot and garlic in a large bowl
- 1/3 cup extra-virgin olive oil
- 1/4 cup fresh lemon juice
- 1 shallot, minced
- 1 small clove garlic, minced
- Kosher salt and freshly ground pepper
- 1 teaspoon sugar (optional)
- 2 pounds mixed heirloom tomatoes, cored, seeded and cut into 1/2-inch pieces
- 1 pound pasta, such as campanelle, penne or fusilli
- 12 ounces fresh mozzarella cheese, cut into 1/2-inch pieces
- 1/2 cup chopped fresh basil
- 1/2 teaspoon grated lemon zest
Mozzarella-Topped Scaloppine With Rustic Tomato Sauce

Season the chicken cutlets with salt and pepper to taste and place in a shallow dish
- Four 4-ounce, thin-sliced skinless chicken cutlets
- Salt
- Freshly ground black pepper
- 3 tablespoons olive oil
- 1 small onion, cut into very small dice (3/4 cup)
- 2 medium cloves garlic, finely chopped
- 1 cup canned chopped tomatoes
- 2 teaspoons balsamic vinegar
- 1/2 teaspoon sugar
- 6 large basil leaves, rolled together tightly, then cut into thin strips
- 4 ounces fresh mozzarella cheese, cut into 1/4-inch-thick slices

Summer Herb Spaghetti with Crumbled Bacon

1.In a large pot of boiling, salted water, cook the spaghetti according to package directions
- 1 pound spaghetti
- 8 slices thick-cut bacon
- 1 cup flat-leaf parsley leaves
- 3/4 cup fresh basil leaves
- 5 tablespoons extra-virgin olive oil
- 5 tablespoons fresh lemon juice
- 1/4 cup finely chopped chives
- Salt and pepper
- 1/2 cup grated parmesan cheese
- Veg out:P
- Skip the bacon and add halved grape tomatoes or crumbled goat cheese.
Bolognese Sauce

1.In a large deep sauce pan, heat the olive oil over medium heat
- 1/4 cup olive oil
- 1 small onion, chopped fine
- 1 carrot, chopped fine
- 1 celery stalk, chopped fine
- 1/4 pound pancetta, chopped coarsely
- 1-1/2 pounds ground beef, preferably chuck
- 1-1/2 pound ground pork
- 2 tablespoons tomato paste
- 1 28 ounce can imported Italian plum tomatoes, passed through a food mill
- 1 cup meat broth, hot
- salt and pepper to taste
Beef Jerky

1. Slice the partially frozen beef into long strips about 1/8 of an inch thick
- 2 pounds of boneless beef top round, fat trimmed, partially frozen
- 1 cup of Worcestershire sauce (I used Whole Foods brand because other brands have high-fructose corn syrup in the ingredients)
- 1/2 cup of water
- 4 garlic cloves minced
- 4 teaspoons of chile powder
- 2 teaspoons of chipotle powder
- 2 teaspoons of black pepper
- 1 teaspoon of salt
- 1 teaspoon of cayenne
Fudgy Chocolate Cake

EASY STEP-BY-STEP 1. Finely grate white chocolate onto a plate using a vegetable peeler

- 1 cup plus 3 tbsp. granulated sugar
- 11/2 cups all-purpose flour

- 1 tbsp. baking powder 1/2 tsp. baking soda
- 1 tsp. salt
- 4 large eggs
- 3/4 cup very hot water
- 1/2 pint heavy cream
- 10 1/2 oz. semisweet chocolate
