Baked Pumpkin Doughnuts with Cinnamon Sugar
- 2 cups Bisquick® Complete pancake & waffle mix
- 1 teaspoon pumpkin pie spice
- 1/3 cup milk
- 1/3 cup canned pumpkin (not pumpkin pie mix)
- 1 tablespoon real maple or maple-flavored syrup
- 1 teaspoon vanilla
- 1/4 cup sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons butter, melted
2-Minute Microwave Pumpkin "Pie"

1. In a 1-cup, or larger, microwave bowl, whisk together all of the ingredients
- 1/3 cup canned pumpkin
- 3 tablespoons liquid egg substitute (or one large egg, beaten)
- 2 tablespoons non-fat half and half or evaporated milk
- 1 1/2 tablespoons no-calorie granulated sweetener (or 2 packets)*
- 1 teaspoon dark molasses or brown sugar
- 1/2 teaspoon pumpkin pie spice (see my homemade recipe HERE)
- 3/4 teaspoon vanilla extract
- Light whipped topping or aerosol whipped cream, optional (2 Tbsp. adds 1 point)

- 1 1/4 teaspoon baking soda
- 1 1/4 teaspoon salt
- One 12-ounce bag milk chocolate chips

- 1-1/2 cups finely chopped PLANTERS Pecans
- 2 Tbsp. sugar
- 3 Tbsp. butter or margarine, melted
- 4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
- 1 cup sugar
- 3 Tbsp. flour
- 1 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1/4 cup Irish cream liqueur
- 4 eggs

Preheat pizza stone in oven to 450 degrees
- 2 tablespoons extra-virgin olive oil, plus extra to grease pan
- 4 garlic cloves, thinly sliced
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh oregano leaves
- 1 28-ounce can whole peeled tomatoes, drained and hand-crushed
- Kosher salt and freshly ground black pepper
- 1 8-ounce ball fresh buffalo mozzarella, drained
- 1/2 cup fresh basil leaves
- Cornmeal for dusting

In a Dutch oven, cook pasta according to package directions
- 1 package (16 ounces) cellentani or spiral pasta
- 2 tablespoons butter
- 1 large onion, finely chopped
- 1 large sweet red pepper, finely chopped
- 3 garlic cloves, minced
- 2 cups chicken or vegetable broth
- 1 cup canned pumpkin
- 1/4 cup heavy whipping cream
- 1 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon pepper
- 1/4 cup finely chopped fresh parsley
- Grated Parmesan cheese
Grilled Vegetable Orzo Salad Recipe

Cook orzo according to package directions
- DRESSING:
- 1-1/4 cups uncooked orzo pasta
- 1/2 pound fresh asparagus, trimmed
- 1 medium zucchini, cut lengthwise into 1/2-inch slices
- 1 medium sweet yellow or red pepper, halved
- 1 large portobello mushroom, stem removed
- 1/2 medium red onion, halved
- 1/3 cup olive oil
- 1/4 cup balsamic vinegar
- 3 tablespoons lemon juice
- 4 garlic cloves, minced
- 1 teaspoon lemon-pepper seasoning
- SALAD:
- 1 cup grape tomatoes, halved
- 1 tablespoon minced fresh parsley
- 1 tablespoon minced fresh basil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup (4 ounces) crumbled feta cheese
