  • 1 (5-oz) package baby arugula
  • 1/2 pomegranate (seeds left whole)
  • 1 (3-oz) bag pork cracklings, broken into small pieces
  • Dressing:
  • 1/8 cup extra virgin olive oil
  • 1/4 cup vegetable oil
  • 4 tbsp red wine vinegar
  • 1 tbsp honey
  • 1/2 tsp ground black pepper
  • 1/4 tsp salt
