Warm Butternut Squash Salad with Pomegranate Dressing

Salad: 1. Heat the olive oil over medium-high heat in a large skillet
- Salad:
- 2 Tbsp olive oil
- 1 medium red onion, roughly chopped
- 1 fennel bulb, roughly chopped
- 1 lb butternut squash, cubed into 1/2” pieces and cooked until fork-tender
- 3/4 tsp salt
- 1/2 tsp ground black pepper
- 1 (5-oz) package baby arugula
- 1/2 pomegranate (seeds left whole)
- 1 (3-oz) bag pork cracklings, broken into small pieces
- Dressing:
- 1/8 cup extra virgin olive oil
- 1/4 cup vegetable oil
- 4 tbsp red wine vinegar
- 1 tbsp honey
- 1/2 tsp ground black pepper
- 1/4 tsp salt
- 1/2 pomegranate (juice & seeds)
Summer Corn Salad Recipe

In a small bowl, whisk 4 teaspoons oil, lime juice, salt and pepper sauce; set aside
- 5 teaspoons olive oil, divided
- 1 tablespoon lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon hot pepper sauce
- 1-1/2 cups fresh or frozen corn, thawed
- 1-1/2 cups cherry tomatoes, halved
- 1/2 cup finely chopped cucumber
- 1/4 cup finely chopped red onion
- 2 tablespoons minced fresh basil or 2 teaspoons dried basil
- 1/4 cup crumbled feta cheese
Classic Tuna Salad

In a large kettle, cook potatoes in boiling salted water until tender
- 3 to 3-1/2 pounds potatoes (about 10 medium)
- 6 hard-cooked eggs
- 1 medium onion, finely chopped
- 1/2 cup mayonnaise
- 1/2 cup evaporated milk
- 3 tablespoons white vinegar
- 2 tablespoons prepared mustard
- 1/4 cup sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Additional hard-cooked eggs, sliced

Pork Chops with Scalloped Potatoes Recipe

- 3 tablespoons butter

- 1 tablespoon paprika
