- 12 egg whites
- 1/2 cup halved cherry tomatoes
- 1/2 cup frozen chopped spinach, thawed and drained of moisture
- 1 cup small broccoli florets
- 1 clove garlic, minced
- 3 Tbsp. chopped fresh basil
- 1/2 cup reduced-fat Parmesan cheese, grated
- 1/4 tsp. kosher salt
- 1/4 tsp. cracked black pepper

- 1/2 cup oil
- 1/2 cup soy sauce
- 1/2 cup rice wine vinegar
- 1 Tbsp ginger, minced

- BLEND (IN A LARGE BOWL)
- 2 c oleo, softened
- 2 c brown sugar, firmly packed

- 4 eggs
- 2 tsp mexican vanilla
- SIFT TOGETHER AND THEN ADD TO SUGAR
- MIXTURE.
- 4 c unbleached white flour
- 2 tsp baking soda
