  • 2 teaspoons chopped fresh thyme or 1 teaspoon dried thyme
  • 4 carrots, peeled and chopped into small bite-sized chunks
  • 2 tablespoons olive or coconut oil
  • 1 small white onion, peeled and finely chopped
  • 3 tablespoons gluten-free flour (such as sorghum, white rice)
  • 1/2 cup milk of choice (I used unsweetened coconut)
  • 2 stalks celery, sliced
  • 2 1/2 cups shredded rotisserie chicken
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley, optional
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
