White Bean and Ham Soup

Rinse the beans, sorting out any broken or discolored ones
- 1 pound dry great Northern beans
- 8 cups water
- 1/2 tsp. salt
- 1 meaty ham hock or 2 to 3 pounds of ham shanks
- 1 cup chopped carrots
- 1/2 stalk celery, chopped
- 1 cup chopped onion
- 1 tsp. minced garlic
- 1 tsp. mustard powder
- 2 bay leaves
- 2 cups chopped ham
- Sea salt and fresh cracked pepper to taste
- Fresh parsley
AMISH SWEET BREAD

- Ingredients:
- 1/2 cup butter, plus 1–2 Tbsp for greasing pans
- 1 cup sugar, plus 1/4 cup sugar for topping
- 1 tsp vanilla
- 1 egg
- 1 cup buttermilk
- 2 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- Butter, for serving
Sirloin, Pepper & Onion Skillet

1.Heat 1 tablespoon oil in a 10-inch skillet over medium-high heat
- 2 tablespoons olive oil
- 1 boneless beef sirloin steak, 3/4-inch thick (about 1 pound), cut into 4 pieces
- 1 large onion, sliced (about 1 cup)
- 2 medium red and/or green peppers, cut into 2-inch-long strips (about 3 cups)
- 3 cloves garlic, minced
- 1 tablespoon red wine vinegar or balsamic vinegar
- 1 can (10 3/4 ounces) Campbell's® Condensed Golden Mushroom Soup
- 1/2 cup water
- 1 cup shredded Cheddar Jack cheese or Cheddar cheese (about 4 ounces)

- HORSERADISH SAUCE:
- 1 bone-in beef rib roast (4 to 6 pounds)
- 1 tablespoon olive oil
- 1 to 2 teaspoons coarsely ground pepper

- 3 to 4 tablespoons prepared horseradish
- 1 teaspoon coarsely ground pepper

- 1 cup canned pumpkin pie filling

Strawberry Salad with a Balsamic Reduction

To prepare the reduction, heat the vinegar, sugar, and strawberries in a 2-qt stockpot until boiling
- Balsamic Reduction:
- 3/4 cup strawberries, chopped
- 1 cup balsamic vinegar
- 1/4 cup sugar
- Salad:
- 1 (7-oz) bag green leaf lettuce
- 1 (6-oz) bag baby spinach
- 1/2 red onion, peeled, thinly sliced
- 1/3 cup sliced almonds, lightly toasted
- 1 pint fresh strawberries, rinsed and sliced
- 3/4 cup goat cheese, crumbled
- 2 Tbsp extra virgin olive oil
- 1/4 cup strawberry balsamic reduction
- 3/4 tsp black pepper

CARIBBEAN BLACK BEAN & MANGO CHILI

- Ingredients:
- Chili:
- 2 pork tenderloins, cleaned and cut into 3/4" chunks (about 2 to 2-1/2 lbs)
- 4 Tbsp cooking oil, divided
- 3 Tbsp jerk seasoning (reduce to 2 Tbsp if you want the chili less spicy)
- 1 onion, diced (about 1-1/2 cups)
- 1 red pepper, diced (about 3/4 cup)
- 1 green pepper, diced (about 3/4 cup)
- 1 jalapeno, finely diced
- 3 cloves garlic, minced
- 2 Tbsp flour
- 5–6 cups chicken stock
- 1/2–3/4 tsp salt
- 1/2 tsp pepper
- 2 (15-oz) cans black beans, drained and rinsed
- 1 (8.8-oz) pouch precooked white rice
- 1 (15-oz) can coconut milk
- Mango Topping:
- 1 ripe mango, diced

In a greased 5- or 6-qt. slow cooker, layer half of the potatoes, sausage, onion, chilies and cheese
- 1 package (30 ounces) frozen shredded hash brown potatoes
- 1 pound bulk pork sausage, cooked and drained
- 1 medium onion, chopped
- 1 can (4 ounces) chopped green chilies
- 1-1/2 cups (6 ounces) shredded cheddar cheese
- 12 eggs
- 1 cup 2% milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Crockpot Pierogi Casserole with Kielbasa – Easy Meals

Instructions Combine all ingredients in your crockpot
- 3 boxes Mrs. T’s Cheddar Pierogies – Regular or mini. We prefer the mini ones. They are more of a bite size and work well for this casserole.
- 4 cups chicken broth
- 1 8 oz. block cream cheese
- 1 cup shredded cheddar cheese
- 1 pound kielbasa – sliced (or other cooked meat mentioned above)
- salt & pepper to taste
