- Salsa:
- 1 cup honeydew, diced
- 1 cup cantaloupe, diced
- 1/2 cup cucumber, seeded, diced, and skin on
- 1/2 cup red onion, small dice
- 1 jalapeño, finely diced
- 1/4 cup fresh lime juice
- 1 dozen mint leaves, chopped
- 3 Tbsp fresh cilantro, chopped
