Tuna salad

Mix all together
- Ingredients:
- Healthy Garden Tuna Salad with Balsamic Vinegar
- Makes 5 servings
- 1 (12oz) can Solid White Albacore Tuna in water, drained
- 1/4 of a small onion, chopped or powdered onion
- 1 tablespoon mayonnaise
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon dried dill
- 2-3 tablespoons fresh chopped cilantro
- Salt and fresh ground black pepper
Crock Pot Angel Pasta

In a small saucepan over low heat melt the margarine
- 4 to 6 chicken breasts, boneless and skinless
- 1/2 C margarine
- 1 (1.05 oz.) pkg. Italian salad dressing mix
- 1 (11 oz) can golden mushroom soup
- 1/2 C white wine
- 1 (4 oz) pkg. onion and chive cream cheese
- 1 (8 oz) pkg. angel hair pasta
Chocolate Thumbprint Cookies

1. Preheat oven to 375 degrees
- Servings: about 20 cookies
- Ingredients
- 2/3 cup unsalted butter, softened
- 1/2 cup sugar
- 1/4 cup unsweetened dark cocoa powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 1 egg
- 1 teaspoon vanilla
- 1 and 1/4 cups all-purpose flour
- 3/4 cup chocolate or multicolor sprinkles (or both!!!)
- 20 (or however many cookies you end up with….) milk chocolate kisses, unwrapped
Chinese Cabbage Salad

Cut Nappi Cabbage into 1" pieces and set aside
- I double this:
- Nappi Cabbage 2 heads
- 5 Tbs margarine
- 2 pkgs of Romain noodles
- 1 & 1/2 cups of sliced Almonds
- I double this:
- Dressing 1/3 cup of Redwine vinager
- 2 Tbs soy sauce
- 3/4 Cup oil
- 1/2 cup sugar
Roasted Brussels Sprouts in Balsamic Glaze

Preheat oven to 375 degrees F
- About a pound of brussels sprouts, trimmed and washed
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 1 to 2 tablespoons Dijon mustard
- 3 to 4 tablespoons good quality balsamic vinegar
- Salt and freshly ground pepper to taste

- 1/3 C whipped cream
- 2 C flour

White Chicken Chili

1. In a large stockpot, melt butter and sauté onions
- (Prep Time: 10 minutes. Cooking Time: 25 minutes)
- 1/2 ½ cup butter
- 1 onion, diced
- 3/4 ¾ cup flour
- 32 ounce box, chicken broth
- 1 (12 ounce) can evaporated milk
- 1-2 Tablespoons, chili powder (depending on how much heat you like!
- 1 Tablespoon cumin
- 1 teaspoon salt
- 1/2 ½ teaspoon black pepper
- 3 cups cooked, cooked chicken
- 2 (15 ounce) cans undrained cannellini beans
- 1-2 (4 ounce) cans diced mild green chiles
Cinnamon Caramel Corn with Pecans & White Chocolate

You can use air popped or microwave popcorn
- 12 C popped popcorn (about 1/2 C kernels)*
- 1 C roughly chopped pecans
- 1 C brown sugar
- 3/4 t cinnamon
- 1/4 C Karo syrup (or honey makes a good substitution)
- 1 stick real butter (1/2 C)
- 1/2 tsp. baking soda
- 1 tsp. vanilla
- 3 squares almond bark

- 1 whole large egg
- 1 cup powdered sugar
Cauliflower Mashed Potatoes

1. Pour 3 quarts of water in a 5-qt stock pot and add 1 tsp salt
- 2 medium heads cauliflower, cleaned and cut into small pieces
- 4 oz cream cheese, softened
- 1/2 cup Parmesan cheese, grated
- 2 garlic cloves, minced
- 3/4 tsp salt
- 3/4 tsp freshly ground black pepper
- 5 Tbsp unsalted butter, softened
- 1/4 cup green onions, chopped (optional garnish)
