Apple Walnut Pancakes

In a large bowl, combine the flours, brown sugar, baking powder and salt
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 tablespoon brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 egg whites
- 1 egg, lightly beaten
- 2 cups fat-free milk
- 2 tablespoons canola oil
- 1 medium apple, peeled and chopped
- 1/2 cup chopped walnuts
- Maple syrup
Zesty Pork Chops

Sprinkle pork chops with pepper and salt
- 4 boneless pork loin chops (4 ounces each)
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 1/4 cup all-purpose flour
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1-3/4 cups sliced fresh mushrooms
- 4 green onions, chopped
- 1/2 cup pimiento-stuffed olives
- 1 garlic clove, minced
- 1 teaspoon minced fresh basil or 1/4 teaspoon dried basil
- 1 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano
Cheese Stuffed Jalapeños

- 8 ounces Monterey Jack cheese, cut into 2-inch x 1/2-inch x 1/4-inch strips
- 15 jalapeno peppers, halved lengthwise and seeded

- 1/4 cup real bacon bits
Raspberry Chocolate Trifle

- 2 cups cold milk
- 1 package (3.9 ounces) instant chocolate pudding mix

- 1/2 cup butter, softened
- 1 package (3 ounces) cream cheese, softened
- 1 cup all-purpose flour

- 1 can (4 ounces) chopped green chilies, drained
- 2 eggs
- 1/2 cup heavy whipping cream

Easy to make, great recipe, and the kids will love these Tomato Bacon Cups
- 1 small tomato, finely chopped
- 1/2 cup mayonnaise
- 1/2 cup real bacon bits
- 1/2 cup shredded Swiss cheese
- 1 small onion, finely chopped
- 1 teaspoon dried basil
- 1 tube refrigerated buttermilk biscuits, 12 ounces separated into 10 biscuits
Summer Squash Casserole

In a large skillet, saute the summer squash, zucchini, mushrooms and onion in oil until tender; drain
- 2 medium yellow summer squash, diced
- 1 large zucchini, diced
- 1/2 pound sliced fresh mushrooms
- 1 cup chopped onion
- 2 tablespoons olive oil
- 2 cups (8 ounces) shredded cheddar cheese
- 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1 cup crushed butter-flavored crackers (about 25 crackers)
- 1 tablespoon butter, melted
Holiday Krispie Treats

Place white chocolate chips and butter in microwave safe bowl
- 12 oz. white chocolate chips
- 4 tbsp. butter
- 4 cups Rice Krispies
- 2 cups M&M’s
Applesauce Spice Cupcakes

In a large bowl, cream butter and sugar
- 1/3 cup butter, softened
- 3/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1-1/3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 3/4 cup applesauce
- Cream cheese frosting
- Directions
- In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine dry ingredients; add to creamed mixture alternately with applesauce.
- Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 25 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to a wire rack. Frost cooled cupcakes. Yield: 1 dozen.
