- 4 eggs
- 3/4 cup sugar
- 1 bottle (1 ounce) red food coloring
- 2 tablespoons buttermilk
- 1 tablespoon canola oil
- 1 teaspoon cider vinegar
- 1 teaspoon vanilla extract
- 3/4 cup cake flour
- 1/4 cup baking cocoa
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Confectioners' sugar
- Filling:
- 1 package (8 ounces) cream cheese, softened
- 1/4 cup butter, softened
- 3 cups confectioners' sugar
- 1 teaspoon vanilla extract
- Additional confectioners' sugar
Roasted Vegetables

Preheat oven to 450ºF. Coat 2 large baking sheets with cooking spray
- 4 spray(s) olive oil cooking spray, divided
- 2 medium sweet red pepper(s), cut into 8 thick strips
- 1 medium green pepper(s), cut into 8 thick strips
- 1 medium yellow summer squash, cut thickly on the diagonal
- 1 medium uncooked zucchini, cut thickly on the diagonal
- 1 medium uncooked red onion(s), cut into large wedges
- 12 oz canned artichoke hearts, without oil, drained and halved
- 1 Tbsp thyme, fresh, fresh, minced
- 1/2 tsp table salt, or to taste
- 1/4 tsp black pepper, freshly ground, or to taste

In a large bowl, combine the first six ingredients
- TOPPING:
- 2-1/2 cups all-purpose flour
- 3/4 cup sugar
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1 cup 2% milk
- 2 eggs
- 1/3 cup butter, melted
- 2 cups (8 ounces) shredded cheddar cheese
- 1 cup finely chopped dried apricots
- 3/4 cup finely chopped pecans
- 3 tablespoons packed brown sugar
- 1 tablespoon butter

In a large bowl,combine corn and sugars
- CARAMEL FROSTING:
- 1 can (17 ounces) cream-style corn
- 1/2 cup packed brown sugar
- 3/4 cup sugar
- 3 eggs
- 1 cup canola oil
- 1 tablespoon baking powder
- 2-1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup raisins
- 1/2 cup chopped nuts
- 1/4 cup butter, cubed
- 1/2 cup packed brown sugar
- 1/4 cup milk
- 2 to 3 cups sifted confectioners' sugar

- 8 oz. tomato sauce
- 1/4 tsp. garlic powder
- 1/4 tsp. thyme leaves
- 1/2 tsp. oregano

- 3 cups sugar
- 6 eggs
- 3 cups flour, sifted

- 1 cup fat-free milk
- 3 tablespoons butter, melted
- 2 tablespoons minced fresh cilantro
- 1 can (8-3/4 ounces) whole kernel corn, drained
- 1/2 cup chopped sweet red pepper
- 1/2 cup chopped seeded jalapeno peppers

- 1 can (15-1/4 ounces) whole kernel corn, drained
- 1/2 cup chopped green pepper
- 1 cup chopped onion
- 2 cups sliced fresh carrots
- 1-1/2 pounds lean ground beef (90% lean)
- 1 can (8 ounces) tomato sauce
- Salt and pepper to taste
