Risotto with Parmesan and Herbs

1. Bring broth and water to boil in large sauce-pan over high heat
- 5 5 5 cups chicken broth
- 1 1/2 1 1/2 1/2 cups water
- 4 4 4 tablespoons unsalted butter
- 1 1 1 large onion, chopped fine
- Salt
- 1 1 1 medium garlic clove, minced
- 2 2 2 cups Arborio rice
- 1 1 1 cup dry white wine
- 1 1 1 cup Parmesan cheese
- 1 1 1 teaspoon lemon juice
- 2 2 2 tablespoons chopped parsley leaves
- 2 2 2 tablespoons chopped fresh chives
- ground black pepper
Spinach Ricotta Shells

Bring a large pot of salted water to a boil
- 4 Tablespoons salted butter
- 2 shallots, chopped
- 5 cups packed fresh baby spinach
- 1 large egg
- 1/2 cup ricotta cheese
- 500 grams conchiglie or large pasta shells
- salt and pepper

French Toast Casserole

- 1-1/4 cups smooth peanut butter
- 3/4 cup granulated sugar
- 1-1/4 cups whole milk
- 2 cups heavy whipping cream
- 1-1/2 tsp vanilla extract
- 1-1/2 cups chopped peanut butter cups (8-10 full-sized ones)
- For the Chocolate Cookies:
- 12 tbsp butter, at room temperature
- 1 cup granulated sugar
- 2/3 cup dark cocoa powder

Quinoa Fied "Rice"

Rinse quinoa a few times in cold water
- Sauce:
- 1 cup quinoa (or 2 1/2 to 3 cups leftover cooked quinoa)
- 1 1/2 cups water or low-sodium chicken stock
- 1/4 small onion, chopped
- 2 carrots, peeled and chopped
- 3 scallions, chopped and divided
- 3 garlic cloves, minced
- 1/2 teaspoon fresh ginger, minced
- 1 tablespoon olive oil
- 2 eggs, lightly scrambled (still raw)
- 1/2 cup frozen peas, thawed
- 1 1/2 tablespoons teriyaki sauce
- 2 1/2 tablespoons soy sauce
- 3/4 teaspoon sesame oil
Turkey Chili Chowder

1. In a large stock pot, combine the olive oil with the onion and garlic
- -1 large onion, diced
- -3 cloves of garlic, minced
- -2 tablespoons of extra virgin olive oil
- -1 pound of 99% lean ground turkey
- -1 teaspoon of sea salt
- -½ teaspoon of freshly ground black pepper
- -½ teaspoon of ground cumin
- -¼ -½ teaspoon of chili powder
- -¼ teaspoon of paprika
- -4 medium size red skin potatoes, rinsed and diced
- -3 carrots, rinsed, peeled and sliced
- -3 celery stalks, rinsed and sliced
- -1 cup of corn kernels
- -1 can (15.5 oz) of white beans (with the liquid)
- -2 cups of chicken stock
- -½ cup of reduced fat sour cream
- -1 cup of milk
- Garnish suggestions: shredded cheddar cheese, cilantro, sour cream, sliced scallions, diced red onion, or diced red peppers
