Crispy Chicken with Creamy Italian Sauce and Bowtie Pasta

1. In a small food processor crush the corn flakes into crumbs
- Sauce:
- 3 large chicken breasts
- 5 C corn flakes
- 3/4 C flour
- 1/2 t salt
- 1/2 C milk
- 6 T olive oil
- 1 12 oz package bowtie noodles (farfalle)
- 1 10 oz container Philadelphia Cooking Cream (Italian Cheese and Herb Flavor)
- 2 cans cream of chicken soup
- 1 C chicken broth
- 1/2 C milk
Tomato, Mozzarella & Basil Orzo

1.Heat olive oil in a medium sauce pan over medium heat
- 3 tablespoons of olive oil
- 1/2 cup of minced red onion
- 1 tablespoon of minced garlic
- 2 cups of orzo pasta
- 4 cups of chicken stock, heated (you could also use veggie stock!)
- salt and pepper
- 2 cups of diced fresh tomatoes (I used cherry tomatoes)
- 1/2 cup of diced fresh mozzarella
- thinly sliced basil
Peanut Butter Oreo Ice Cream Pie

Finely crush about 25 Oreos in a food processor
- 1 box Oreo Cookies
- 6 tbsp melted butter
- 2 cups cold heavy cream
- 1 (14 oz) Sweetened Condensed Milk
- 1/2 cup peanut butter
- 1/2 teaspoon vanilla extract
- 1 bottle Smucker’s Chocolate Fudge Microwave Topping
Strawberry Champagne Slushies

- 1 (16-ounce) container fresh strawberries, hulled
- 1 (750 milliliter) bottle Champagne or sparkling wine
- 2 tablespoons honey
Broccoli-Cheddar Soup

Melt the butter in a large Dutch oven or pot over medium heat
- 6 tablespoons unsalted butter
- 1 small onion, chopped
- 1/4 cup all-purpose flour
- 2 cups half-and-half
- 3 cups low-sodium chicken broth
- 2 bay leaves
- 1/4 teaspoon freshly grated nutmeg
- Kosher salt and freshly ground pepper
- 4 7-inch sourdough bread boules (round loaves)
- 4 cups broccoli florets (about 1 head)
- 1 large carrot, diced
- 2 1/2 cups (about 8 ounces) grated sharp white and yellow cheddar cheese, plus more for garnish
Cashew Chicken

1. Cook white rice according to package directions
- 2 lbs boneless skinless chicken, chopped
- 8 cloves garlic
- 1 cup cashews
- 1 bell pepper, diced (optional)
- 4 tablespoons Hoisin sauce
- 8 green onions, sliced
- 2 tablespoons white wine vinegar
- 2 tablespoons corn starch
- 3/4 water or chicken stock
- 2 tablespoons olive oil
- kosher salt and pepper
- steamed white rice
Steak Burritos for Two

Combine salsa and water in a small saucepan; bring to a boil
- 1/4 cup prepared fresh salsa
- 1/4 cup water
- 2 tablespoons instant brown rice
- 3/4 cup canned black beans, preferably low-sodium, rinsed
- 6 ounces strip steak, trimmed and thinly sliced crosswise
- 1/8 teaspoon freshly ground pepper
- 1 1/2 teaspoons canola oil
- 2 8-inch tortillas, preferably whole-wheat
- 1/4 cup shredded sharp Cheddar cheese
- 2 tablespoons prepared guacamole
- 1 tablespoon coarsely chopped fresh cilantro
Chicken Avocado Burger

- 1 pound ground chicken
- 1 large ripe avocado – cut into chunks
- 1/2 cup panko crumbs or other bread crumbs
- 1 chopped clove of garlic

Samoa Bars

- Cookie Base:
- ½ cup sugar ¾ cup butter, softened
- 1 large egg ½ teaspoon vanilla extract
- 2 cups all purpose flour ¼ teaspoon salt
- Topping:
- 3 cups shredded coconut 12-oz chewy caramels
- ¼ teaspoon salt 3 tablespoons milk
- 10 oz. dark or semisweet chocolate
