Cook ground beef and onion, drain and return to skillet
- cooking spray
- 2/3 lb ground beef
- 2 med onions, chopped
- 29 oz can stewed tomatoes
- 2 1/2 C canned tomato juice
- 4 oz canned green chili peppers, diced, drained
- 2 tsp chili powder
- 1 1/2 servings elbow macaroni
- 31 oz can pinto beans, rinsed and drained
- 1/2 C low fat cheddar cheese, shredded
Porcini Roast Beef

Oven roast
- 3 lb eye round roast, trimmed
- 1 oz package dried porcini mushrooms
- 1 tbsp dried green peppercorns
- 1 tbsp fresh rosmary leaves
- 3 garlic cloves, peeled
- 2 tsp extra virgin olive oil
- 3/4 tsp salt
Mediterranean Dip

- 1 pkg hummus
- 1/2 C chopped tomatoes
- 1/4 C chopped cucumbers
- 1 pkg (4 oz) feta cheese
- 2 Tbsp sliced black olives - optional

Feta and Veggie Frittatas WW

Preheat oven to 350. coat with coolimg dpray
- 4 sprays cooking spray
- 6 lg eggs
- 4 egg whites
- 1 Tbsp water
- 1/4 tsp salt
- 1/4 tsp black papper
- 2 C fresh baby leaf spinach, coursely chopped
- 1 C drained artichoke hearts, w/o oil,
- 1 C crumbled feta cheese
- 1/2 C chopped roasted red pepper, packed in water
- 1/2 sliced scallion
- 1/4 C lowfat cream chese, room temo.
Baked Artichoke and Spinach Dip WW

Preheat oven to 350. In a medium bowl, combine all ingredients except parmesan
- 15 oz can artichoke hearts, without oil, rinsed, drained, chopped
- 10 oz chopped frozen spinach, cooked and drained
- 8 oz plain, lowfat greek yogurt
- 4 oz lowfat cream cheese
- 1/4 C mozzarella cheese
- 1 clove garlic minced
- 1/2 tsp salt
- 1 pinch cayenne pepper
- 1/4 C grated parmesan cheese
Crustless Pumpkin Pie WW

Mix all thoroughly spray 1 in pie pan pour into pan cook 1 hour @ 350 degrees let cool
- 3/4 C Splenda
- 1/2 C light Bisquick
- 12 oz can evaporated skim milk
- 1/2 C egg beaters or 3 egg whites
- 16 oz can pumpkin
- 1 1/2 tsp vanilla
- 1 1/2 tsp pumpkin pie spice
Hot Fiesta Dip WW

Microwave frozen corn according to package directions, drain
- 10 oz frozen corn kernels
- 1 1/2 C salsa
- 3/4 C reduced fat Mexican style blend shredded cheese
- 2 Tbsp uncooked scallions chopped
