Deep-Dish Ham Quiche with Herb and Asparagus Salad

To make the pastry: combine the flour, salt, and sugar in a large mixing bowl
- Pastry:
- Ingredients
- 2 cups all-purpose flour, plus more for dusting
- 1 teaspoon salt
- 1/4 teaspoon sugar
- 3/4 cup (11/2 sticks) unsalted butter, cold and cut into small chunks
- 1 large egg yolk
- 3 tablespoons ice water, plus more if needed
- Filling:
- 3 tablespoons extra-virgin-olive oil
- 2 large Vidalia onions, sliced
- 3/4 pound smoked ham, cubed
- 8 large eggs
- 1 quart heavy cream
- Kosher salt and freshly ground black pepper
- Salad:
- 2 bunches asparagus (about 1 pound each), stems trimmed
- 4 ounces Parmesan, shaved with a peeler
- 2 handfuls fresh flat-leaf parsley, hand-torn
- 1 handful fresh mint, hand-torn
- 1 handful fresh dill, hand-torn
- Extra-virgin olive oil
- 1/2 lemon, juiced
- Kosher salt and freshly ground black pepper

Cook the first five ingredients in a large pot on a hot stove
- 8 8 8 c water
- 1/2 1/2 1/2 tsp salt
- 1/2 1/2 1/2 tsp pepper
- 2 2 2 chicken breasts
- 2 2 2 bay leaves
- 2 2 2 c potatoes
- 1 1/2 1 1/2 1/2 c onions
- 1/2 1/2 1/2 c carrots
- 2 2 2 tsp cilantro
- 2 2 2 tsp paprika
- 1/2 1/2 1/2 tsp garlic salt
- 1/4 1/4 1/4 c cumin
- 3 3 3 cans green chilis
- 1 14 1 14 1 14 oz can diced tomatoes
- 1 10 1 10 1 10 oz can diced green chili and tomatoes
Chicken Paillards with Avocado and Pomegranate Salsa

Prepare the chicken: Pound each breast to 1/8" thick
- Chicken:
- 4 chicken breasts
- 1/4 c fresh lemon juice
- 3 tbsp EVOO
- 1 tbsp pomegranate molasses
- Kosher salt and freshly ground black pepper
- Salsa:
- 1 large lemon
- 1/2 medium pomegranate
- 3 small scallions, thinly sliced
- 2 medium firm-ripe avocados, 1/4" dice
- 2 tbsp EVOO
- 2 tsp chopped fresh leaf parsley
- 1 tsp finely diced jalapeno
- 1 tsp pomegranate molasses

- 1/2 c Chinese rice wine or dry sherry
- 3 tbsp packed light brown sugar
- 4 cloves garlic, smashed
- 1 2" piece ginger, peeled and sliced
- 2 pieces star anise

- 3 lbs boneless pork shoulder
- 1 head bok choy, roughly chopped
- 3 1/2 oz. dried rice vermicelli noodles

Chicken Potpie Skillet Pizza

Place a 12" cast iron skillet in oven, and preheat oven to 500 degrees F
- 4 tsp olive oil, divided
- 1/4 c prechopped onion
- 1/4 c matchstick cut carrot
- 1/4 c prechopped celery
- 1/4 c frozen green peas
- 1 1/2 tbsp all purpose flour
- 1 c unsalted chicken broth
- 10 oz refrigerated fresh whole wheat pizza dough
- 5 oz cooked chicken breast shredded
- 3 oz preshredded mozzarella cheese
- 1 tsp thyme leaves
- 1/4 tsp black pepper
- 1/8 tsp kosher salt

- 1 cup prechopped celery and onions
- 1 lb frozen fully cooked meatballs
- 4 cup reduced sodium chicken broth
- 3 oz. whole wheat medium shell or small pasta
- 1 pkg baby spinach
- 1/2 cup finely grated parmesan cheese
- Red pepper flakes (optional)
Mini Chip Cocoa Pancakes

- 1 1/4 c all purpose flour
- 1/4 c baking soda
- 1/4 c sugar
- 3 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 1 c milk
- 2 tbsp butter, melted
- 1 1/2 tsp vanilla extract
- 2/3 c mini chocolate chips
- Powdered sugar & whipped cream, optional
