Chocolate Fudgecyles

- 1 pkg chocolate pudding mix w/2 c milk and whisk in 2 c plain yogurt.
- Fill moulds 1/2 way and freeze till solid.
- Scoop soft ice cream and push into moulds, leave enough room to
- top off w/remaining chocolate mix
Quick Marinated Yellow Squash Salad

1.In a medium bowl, whisk together lemon juice and oil
- 3 tablespoons fresh lemon juice (from 1 lemon)
- 3 tablespoons olive oil
- Coarse salt and ground pepper
- 2 medium yellow squashes (8 ounces each), halved lengthwise and thinly sliced crosswise
- 1 shallot, thinly sliced crosswise
- 1 to 2 teaspoons fresh thyme leaves
Greek Tortellini Salad

Bring a large pot of lightly salted water to a boil
- 2 (9 ounce) packages cheese tortellini
- 1/2 cup extra virgin olive oil
- 1/4 cup lemon juice
- 1/4 cup red wine vinegar
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 6 eggs
- 1 pound baby spinach leaves
- 1 cup crumbled feta cheese
- 1/2 cup slivered red onion
Easter Eggs

- Easter Eggs (see Vanilla Variation):
- 1/3 cup butter or margarine
- 1 (3-ounce) package chocolate pudding and pie filling mix (not instant)
- 1/4 cup milk
- 1/8 teaspoon almond extract
- 1 3/4 cups powdered sugar
- 1/2 cup finely ground blanched almonds
- MILK CHOCOLATE COATING
- 12 ounces milk chocolate chips
- 6 tablespoons solid vegetable shortening
- SEMI SWEET CHOCOLATE COATING
- 12 ounces semi sweet chocolate chips
- 1/2 cup sold vegetable shortening
- WHITE CHOCOLATE COATING
- 16 ounces white baking chips
- 1/2 cup solid vegetable shortening.
Coconut Fudge Bars

13 x 9 parchment lined pan sprayed with oil
- 1 c butter
- 2 &1/2 c grham crumbs\1 c sugar
- 2/3 c evapourated milk
- 1 pkfg (250g) marshmallows
- 1 &1/2 pkg chocolate chips
- 1 c coconuts, toasted(350 for 2/4 min)
- 1 c chopped walnuts
Oven Baked Ravioli

Preheat oven to 375º. In 13 inch x 9 inch baking dish, evenly spread half of the pasta sauce
- 1 jar (26 oz size) pasta sauce
- 1 package (25 oz size) frozen cheese ravioli
- 1 cup water
- 1 cup shredded mozzarella cheese
Sweet Potato Spoon Bread

Preheat oven 400 f. Generouslyy grease 2 qt casserole dish with 1 T butter
- 4 T unsalted butter
- 2 med sweet potatos
- 2 1|2 c milk
- 1 T thyme
- 1 T light brown sugar<2 t coarse sea salt
- 1 |2 t ground pepper
- 1 c finely ground cornmeal
- 4 large eggs, separated
- 2 t baking powder
Corn Chowder Soup

Fry bacon and dice. Chop onion and garlic, saute, Dice potatoes, tomatoes and zucchini
- 6 slices bacon
- 1 medium onion
- 2 medium potatoes
- 1 clove garlic
- 1/4 t hot pepper flakes
- 2 medium tomatoes
- 1 small zucchini
- 2 c frozen corn
- 1 can creamed corn
- 4 c vegetable stock
- 1 c milk
Raviolli w/Sausage & Red Pepper Sauce

- PREPARATION:
- 25 ounces package frozen cheese-filled ravioli
- 2 cups frozen bell pepper and onion stir-fry
- 1 jar (26 ounce) chunky spaghetti sauce
- 8 ounces smoked sausage -- sliced
- 1/4 cup shredded fresh parmesan cheese
- In 3 1/2 to 4 quart slow cooker, combine all ingredients except Parmesan cheese; mix well.
- Cover; cook on low setting for 5 to 6 hours.
- Sprinkle individual servings with cheese.
