Turkey (Chicken) Veggie Fajitas

Marinade. Mix together lime juice, chile powder, cumin and salt
- 1/4 cup lime juice
- 1 teaspoon ancho chile powder
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 cup orange juice
- 1 pound turkey cutlets, cut into long, thin strips
- 2 tablespoons canola oil
- 1 large sweet onion, peeled and sliced
- 2 green bell peppers, cored, seeded and sliced
- 1 cup shredded carrots
- 4 cloves garlic, coarsely chopped
- 1 pound zucchini, cut into 1/4-inch-thick matchsticks
- 1/2 pound sliced mushrooms
- 1/2 teaspoon salt
- 1/2 cup cilantro leaves
- 1/4 cup shredded reduced-fat Mexican cheese blend
- 4 scallions, sliced
- 8 corn tortillas, gently warmed

- 2 pkg chocolate cake mixes
- 1 c vegtable oil
- 4 eggs
Ginger-Peanut Chicken-Salad Wraps

Heat oil in a large, nonstick skillet over medium-high heat
- 1 teaspoon olive oil
- 6 (4 oz.) skinless, boned chicken breast halves
- 1 cup cucumber, chopped, seeded and peeled
- 3/4 cup chopped red bell pepper
- 1 1/2 tablespoons sugar
- 1 teaspoon minced, peeled fresh ginger
- 3 tablespoons fresh lime juice
- 1 tablespoon low-sodium soy sauce
- 1/4 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1 garlic clove, crushed
- 1/4 cup creamy peanut butter
- 2 tablespoons water
- 3 tablespoons chopped fresh cilantro
- 8 (8 inch) fat-free flour tortillas
- 4 cups chopped romaine lettuce

1. Bring a medium saucepan of water to a boil
- 1 teaspoon coarse salt, plus more for seasoning
- 8 ounces gemelli or other pasta, such as penne or rotini
- 4 tablespoons extra-virgin olive oil
- 1 small onion, cut into 1/4-inch dice
- 2 cloves garlic, minced
- 1 carrot, peeled and cut into 1/2-inch dice
- 1 zucchini (about 6 ounces), cut into 1/2-inch dice
- 4 ounces green beans, cut into 1-inch pieces
- 1 1/4 cups corn kernels, cut from 1 ear, or frozen
- Freshly ground pepper
- 2 tablespoons balsamic vinegar
- One 15-ounce can cannellini beans, rinsed and drained
- 1 pound assorted tomatoes, roughly chopped

- 1 c butter room temp
- 4 eggs
- 1 c cocoa powder, sifted
- 1 c flour, sifted
- 2 t vanilla
- 1&1/2 c chopped pecans
- 24 caramels or carmel syrup
