Baked Cheese Ravioli with Turkey

Preheat oven to 350 degrees F
- 1 package (9-ounce size) fresh or frozen four-cheese ravioli
- 3 cups baked turkey cut into 1/2 -inch-by-2-inch strips
- 1/4 cup thick sliced green onions
- 2 tablespoons butter
- 3 cups sliced mushrooms (cremini, shiitake, maitake, trumpet or oyster)
- 1 clove garlic, minced
- 1/2 teaspoon crumbled dried oregano
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 1/4 cup grated sharp Cheddar cheese
- Cream Sauce***
- 4 tablespoons butter
- 4 tablespoons flour
- 1 cup chicken stock
- 2 cups heavy cream
- 1/2 teaspoon salt
- 2 pinches nutmeg

Saucy Cheese Tortellini

Cook tortellini according to the package directions
- 1 LB. fresh or frozen cheese tortellini
- 1 can condensed cream of mushroom soup
- 1 soup can of milk
- 3/4 frozen peas
- 1/2 cup shredded carrot
- 1/8 teaspoon ground peppershopping list
- 3 tablespoons grated parmesan cheese
- 1/4 cup chopped fresh parsley
- chopped toasted walnuts for garnish
Marinated Vegetable Salad

Gorgeous when first made, every time vegetables are left over, they're added to the mix
- Ingredients
- 1 small cauliflower
- 1/4 cup ( 50 mL) kosher or coarse salt
- 3 cups ( 750 mL) white-wine vinegar
- 1 tsp ( 5 mL) fennel seeds
- 4 garlic cloves, peeled and left whole
- 2 carrots, peeled and cut diagonally into 1/4-inch (0.5-cm) slices
- 3 celery stalks, cut diagonally into 1/2-inch (1-cm) pieces
- 16 pearl onions, peeled
- 3 red peppers, seeded and stems discarded, cut into 1/2-inch (1-cm) strips
- 1 fennel bulb, cut into 1/4-inch (0.5-cm) strips
- 1/2 cup ( 125 mL) olive oil
- 1/4 cup ( 50 mL) red-wine vinegar
- 1/2 tsp ( 2 mL) salt
- 1/4 tsp ( 1 mL) freshly ground black pepper
- 50 g tin oil-packed anchovies, rinsed and patted dry
- 18 large green olives, pitted
- 18 kalamata olives, pitted

- 3 1/2 t cajun season blend(or any you enjoy)
- 3/4 c flour
- 2 eggs
- 2 t cream or 1/2 and 1/2

Family Secret Tomato Sauce

The point of this recipe is to make a large amount at one time, when tomatoes are in season
- 10 quarts tomato puree (about 30 pounds tomatoes)
- 4 large onions, chopped
- 1 cup dried basil
- 1/2 cup honey
- 4 tablespoons dried oregano
- 3 tablespoons salt
- 2 tablespoons ground dried lemon peel
- 2 tablespoons thyme
- 2 tablespoons garlic powder (or more, to taste)
- 2 tablespoons dried parsley
- 2 teaspoons pepper
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg

- 1/4 c flour
- 1/4 t Baking powder
- 1/8 t salt
- 2 eggs
- 2/3 c sugar\1/2 T fresh brewed coffee
- 1 t vanilla of coffee extract
- 2 T butter
- 5 oz chocolaer
- 2 oz unsweetened chocolate
- 3/4 c chocolate chips
