Mint Chip Cookietini

the milk, cookie dough vodka, chocolate vodka, and creme de menthe in shaker over ice
- 1/3 cup milk (or cream, half-and-half, melted vanilla ice cream, or your favorite dairy substitute)
- 2 Tablespoons Pinnacle Cookie Dough Vodka
- 2 Tablespoons Pinnacle Chocolate Vodka (or Chocolate Whipped Vodka)
- 2 Tablespoons Creme De Menthe Liqueur
- Garnish: (optional)
- Chocolate syrup (or hot fudge or melted chocolate)
- Chocolate shavings (or mini chocolate chips or chocolate cookie crumbs)
- Whipped Cream (regular or chocolate)
Fennel Gratin

Boil the fennel in water until tender, about 5-6 minutes and drain
- 2 pounds fennel bulbs (about 3-4 bulbs), fronds and stems removed and cut into 1/4 inch thick slices
- 1 tablespoon oil
- salt and pepper to taste
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup panko bread crumbs (or regular bread crumbs)
- 1/2 cup Parmigiano Reggiano (Parmesan), grated
- 2 teaspoons thyme, chopped
- 1 tablespoon oil

- 1/2 cup leftover gravy, warm
- 1/4 cup leftover cranberry sauce

Very Cherry Martini

- 1 tablespoon Tart Cherry Juice Concentrate

- 1 ounce unsweetened chocolate, melted and cooled
- 1/8 teaspoon salt
- 2 teaspoons vanilla
- 1 cup confectioners sugar, sifted after measuring*

Pineapple Upside Down Shot

Dissolve the gelatin into the boiling water in a large bowl
- 3/4 cup (180 mL) boiling water
- 1 3-ounce box pineapple Jello gelatin
- 1/4 cup (60 mL) cold water
- 1/2 cup (120 mL) vodka
- 1/4 cup (60 mL) butterscotch schnapps
- 1/4 cup (60 mL) Irish cream
- Maraschino Cherries
