Garlic Paprika Shrimp

A wonderful appetizer!
- * 2 tablespoons extra virgin olive oil
- * 6 garlic, cloves, minced
- * 1 pound large shrimp, peeled, and, deveined
- * 1 tablespoon smoked paprika
- * 1/3 cup white wine
- * 2 teaspoons tomato paste
- * 1/4 teaspoon salt
- * 2 tablespoons chopped fresh parsley, or, coriander
Chicken Alfredo and Rice Casserole

This traditional chicken and rice casserole is quick and easy
- * 1 10-oz. container refrigerated light Alfredo pasta sauce
- * 1/2 cup milk
- * 2-1/2 cups cooked white rice or wild rice
- * 2 cups cubed cooked chicken
- * 1 cup frozen peas
- * 1/3 cup chopped bottled roasted red sweet peppers
- * 1/4 cup slivered almonds, toasted (optional)
- * 1 Tbsp. snipped fresh basil or 1/2 tsp. dried basil, crushed
- * 1 cup soft bread crumbs
- * 1 Tbsp. butter, melted
Coconut-Chicken Dippers

HEAT oven to 400ºF. COMBINE coating mix, coconut, curry powder and pepper in pie plate
- 1 pouch Shake'N Bake Extra Crispy Original Coating Mix
- 1 cup flaked coconut, toasted
- 1/4 tsp. each curry powder and cayenne pepper
- 1 egg
- 1 lb. (450 g) boneless skinless chicken breasts, cut into 1-inch-wide strips
- 1/4 cup Miracle Whip Dressing
- 1 Tbsp. mango chutney
Thai Beef Noodle Salad

This is the closest recipe that I have found that matches my favourite restaurant
- 1 flank marinating steak, (about 1 lb/500 g)
- 1 English cucumber
- 1 carrot, large
- 6 oz (170 g) wide rice stick noodles
- 1/4 red onion, thinly sliced
- 3 tbsp (45 mL) chopped fresh coriander
- 3 tbsp (45 mL) chopped fresh mint
- 3 tbsp (45 mL) Thai basil leaves or basil leaves
- 1/4 cup (50 mL) chopped unsalted peanuts
- Marinade
- 2 tbsp (25 mL) soy sauce
- 1 tbsp (15 mL) sesame oil
- 1 tbsp (15 mL) vegetable oil
- 2 cloves garlic, minced
- 2 tbsp (25 mL) grated gingerroot
- 1 tbsp (15 mL) granulated sugar
- Dressing
- 1/2 cup (125 mL) hot water
- 1/4 cup (50 mL) granulated sugar
- 2 tbsp (25 mL) lime juice
- 2 tbsp (25 mL) fish sauce
- 2 Thai chili pepper, seeded and thinly sliced
Prime Rib Roast with Mushroom Gravy

A great way to serve prime rib
- * 1x9 pound well-trimmed, rib roast
- * 4 teaspoons rosemary, chopped
- * 1 tablespoon coarse kosher salt
- * 2 teaspoons freshly ground black pepper
- * 1/2 cup olive oil
- * 4 tablespoons butter
- * 1 pound button mushrooms, cut into ¼ inch pieces
- * 2 shallots, finely diced
- * 2 tablespoons all purpose flour
- * 3 cups beef broth
- * 3/4 cup dry red wine

Boil the potatoes in salted water until just cooked
- • 330g Desirée potatoes, peeled
- • 2 spring onions, finely sliced
- • sea salt and fresh ground black pepper
- • 1 heaped teaspoon plain flour
- • 1 large knob of butter
- • 2 eggs, preferably free-range or organic
- • 3 slices of good-quality smoked salmon
- • 2 heaped teaspoons soured cream
- • a bunch of fresh chives, finely chopped

- • 4 good-sized beetroots, lovely different colours if possible, scrubbed, peeled and cut into fine matchsticks
- • • 3 ripe pears (or you could use apples), peeled, cored and cut into matchsticks
- • 1 x lemon oil dressing see below recipe
- • sea salt and freshly ground black pepper
- • 200g/7oz feta cheese
- • a small bunch of fresh mint, smallest leaves picked
- optional: a large handful of sunflower seeds

Pork Souvlaki (wicked kebabs)

We Brits often think of kebabs as a guilty pleasure
- • 3 sweet pointed peppers –
- a mixture of colours is nice
- • 8 flatbreads, to serve
- • 4 sprigs of fresh mint,
- leaves picked
- • a small bunch of fresh dill,
- chopped (stalks and all)
- • red wine vinegar
- • Greek extra virgin olive oil
- • 1 lemon, to serve
- For the kebabs
- • 800g leg of pork, shin
- if you can get it, the best
- quality you can afford,
- cut into 2cmchunks
- • 1 tablespoon dried mint
- • 1 tablespoon dried oregano
- • juice of 1 lemon
- • 100ml good-quality olive oil
- • 2 cloves of garlic,
- peeled and finely grated
- • 1 tablespoon red
- wine vinegar
- • a pinch of freshly
- ground black pepper
- • a pinch of sea salt
- For the tzatziki
- • ½a large cucumber
- • 200ml natural yoghurt
- • 1 small clove of garlic, peeled
- • 1 heaped teaspoon dried mint
- • 1½teaspoons red
- wine vinegar
Homemade Ketchup

- 1 28 oz can of chopped tomatoes
- 1 5.5 oz can tomato paste
- 1 large onion, chopped
- 1 cup red wine vinegar
- 1/2 cup sugar
- 1/2 cup olive oil
- 2 tablespoons ground nutmeg
- 1/2 teaspoon ground allspice
- 2 or 3 bay leaves
- a sprinkle or two Salt and Pepper
